So now that are set in your assigned camp, let's cook! Most likely you can't avoid bringing a cooler and ice to keep certain food refrigerated, and thats a good thing. However avoid packing too many food items that could turn back and make you sick if not refrigerated properly. Avoid over packing all together. If you are planning to cook burgers for example, bring one or two of the most popular condiments for the whole family (perhaps ketchup and pickles or mustard and onions). Although you should equip yourself on your camping trip of at least one sharp knife, try to arrange and precut most of your food items (meats, fruits, veggies, even cheeses).

If you are going to do a lot of physical outdoors activities, make sure you pack plenty of easy snacks to grab and go such as nuts, peanut butter, crackers, and dried fruits. Avoid only bringing junk food, although usually easy to preserve, they are obviously unhealthy for you and won't provide you all that essential energy you need to make this trip successful.

Now, these potatoes can be stuffed with almost anything. I like to use them as bowls for a main lunch so I make sure to include a source of proteins, cheese and some veggies.

Ingredients:

2 large sweet potatoes (do not peel)
1 cup spinach (you can use the ones from a can if you are afraid that fresh ones would not keep well)
cup shredded Swiss cheese
4 Tbsp. bacon bites
Handful crispy fried onions (your favorite brand)
Pinch chili powder
Salt, pepper

Method:

  1. I suggest starting cooking the potatoes way ahead. Do poke holes with a fork in each of them and place them in foil over the campfire or the grill.
  2. After 30 minutes or so, double-check and if they are soften, start filling them up with the goodies.
  3. To finish the recipe, scoop the inside of the potatoes in a bowl and mix in the cheese, bacon bites, spinach and seasonings.
  4. Fill up each potato and place back on the grill or the compare (perhaps in an aluminum pan or in foil).
  5. Make sure the cheese is nicely melted and the spinach is cooked.

1 large fresh Cuban bread or baguette bread
4 Tbsp. garlic butter
16 honey roast turkey slices
9 think American cheese slices

Method:

  1. Make sure your campfire is nicely going and cut your long bread at 8 different places (do not cut all the way, maybe 2/3)
  2. Spread the garlic butter in each slot.
  3. Add 2 slices of turkey and one slice of American cheese in each hole.
  4. Place the bread in a foil paper and on the fire for the cheese t melt and the garlic butter to get absorbed.
  5. Cut and serve or let everyone grab a piece.

  1. Do boil water on the campfire enough to cook the macaroni, as you typically would at home on stovetop.
  2. I like to use concentrate milk because you can purchase in can and avoid having to pack cow milk. But you can certainly use the milk you have handy in your cooler.
  3. So, when the noodles are cooked, drain well and place back in the saucepan you use with the milk, cheese and seasonings.

  3. Prepare all your ingredients and use preferably a very thick skillet on the burning fire at the camp.
  4. In a bowl, mix all the ingredients and pour in the skillet.
  5. Cook for about 15 minutes or until the eggs are cooked and cheese well melted.
