Beef and Refried Bean Burrito
A classic burrito recipe! Makes 4 burritos
Ingredients:
- 4 10-inch burrito shells
- -pound ground beef
- 1 packet no sodium taco seasoning (like Mrs. Dash)
- 4 tablespoons salsa divided
- 1 can refried beans
- 1 package shredded Mexican blend cheese or Monterey jack
Directions:
In skillet add ground beef and seasoning; brown and drain; meanwhile, warm beans as directed; layout shells, near the bottom put a spoonful of seasoned beef, a spoonful of refried beans, salsa, and cheese; fold; warm under broiler 3-5 minutes or until cheese melts
Steak and Rice Burrito
Great for making ahead of time! Makes 4 burritos
Ingredients:
- tablespoon olive oil
- 1-2 pound of steak strips
- 2 cups leftover rice
- 1 tablespoon chili powder
- 4 tablespoons salsa
- 1 package Mexican blend cheese
Directions:
In skillet over oil on medium high heat brown steak, remove; in a large bowl mix together rice, steak, and chili powder; layout shells, near the bottom place a spoonful of steak mixture, salsa, cheese; warm under broiler 3-5 minutes or until cheese melts
Black Bean and Steak
Great for a snack or lunch! Makes 4
Ingredients:
- 4 10-inch burrito shells
- 1 tablespoon olive oil
- -pound steak strips
- 1 packet taco or fajita seasoning low or no salt (like Mrs. Dash or Badia)
- 4 cups rice
- 1 avocado diced
- 1 can low sodium black beans washed and drained
- 1 package shredded cheddar cheese
Directions:
In a skillet brown steak and add seasoning; drain; mix steak, rice, avocado, and beans together; layout shells, put spoonful of mix near bottom of shell; cover with cheese and fold; if desired warm under broiler 3-5 minutes
Chicken, Corn, & Black Bean
Try different types of beans! Makes 4
Ingredients:
- 4 10-inch burrito shells
- 3 cups diced or shredded chicken
- 1 cup whole kernel corn
- 1 can black beans washed and drained
- 3 cups brown rice
- tablespoon chili powder
- 2 teaspoon cumin
- 1/3 cup salsa
- 2 cups shredded Monterey jack cheese
Directions:
In a bowl mix together chicken, corn, black beans, rice, chili powder, cumin, salsa, cheese; layout shells, put spoonful of mix near bottom of shell; fold; if desired warm under broiler 3-5 minutes
BLT Burrito
Add some cilantro! Makes 2
Ingredients:
- 2 10-inch burrito shells
- 1 cup diced bacon
- 1 cup diced tomato
- 1 cup shredded lettuce
- 1 cup rice
- teaspoon chili powder
- 2 tablespoons salsa
- 1 cup shredded cheddar cheese
Directions:
In bowl mix together bacon, tomato, lettuce, rice, chili powder, salsa, cheese; layout shells, put spoonful of mix near bottom of shell; fold; if desired warm under broiler 3-5 minutes
BLT & Avocado Burrito
Try it with some basil leaves! Makes 2
Ingredients:
- 2 10-inch burrito shells
- 1 cup diced bacon
- 1 cup diced tomato
- 1 cup shredded lettuce
- 1 avocado diced
- 1 cup brown rice
- teaspoon chili powder
- 2 tablespoons salsa
- 1 cup shredded cheddar cheese
Directions:
In bowl mix together bacon, tomato, lettuce, avocado, rice, chili powder, salsa, cheese; layout shells, put spoonful of mix near bottom of shell; fold; if desired warm under broiler 3-5 minutes
BLT & Corn Burrito
Embolden the flavors, add some cumin! Makes 2
Ingredients:
- 2 10-inch burrito shells
- 1 cup diced bacon
- 1 cup diced tomato
- 1 cup shredded lettuce
- whole kernel corn
- teaspoon chili powder
- 1 cup rice
- 2 tablespoons salsa
- 1 cup shredded cheddar cheese
Directions:
