Preface

There are so many good things to say about the Whole30. It has the power to radically transform your health in just 30 days. Its incredibly effective at breaking undesirable food-related habits. It fosters a comfortable, healthy, secure relationship with food. It can be one of the most life-changing, empowering experiences of your life.

But the dishes. Oh, the dishes.

And the grocery shopping. And the label-reading. And the prepping. And the cooking. Did we mention the chopping? So much chopping. Making the switch from grab-and-go, processed, convenience, or take-out foods to home-cooked whole food meals can have a bit of a learning curve, especially if youd describe yourself as kitchen challenged. But if theres one thing Ive learned in my own Whole30 and food freedom journey, its not to overthink this part.

Your Whole30 meals dont have to be complicated, time-consuming, or use obscure ingredients to be incredibly satisfying, totally delicious, and make you feel like a kitchen rock star. You can get an impressive Whole30 dinner on the table in under 20 minutes. You can buy normal foods from any old grocery store and use simple techniques to transform them into delicious, hearty, nourishing meals. You can throw five things into a slow cooker, walk away, and come back to an incredible, ready-to-serve feast. And thanks to modern conveniences like packaged veggie noodles, precut produce, and minced garlic in a jar, if you really dont want to chop, you probably dont have to.

Truth is, all you need to succeed with the Whole30 are whole-food ingredients and some helpful instructions to help you prep, cook, and serve them in a way thats fast, easy, and tasty. In fact, this is an entire book full of recipes that do just thatplus the tips, tricks, and hacks Ive cultivated in my own Whole30 kitchen. Weve created more than 150 recipes using few ingredients, simple preparation instructions, short start-to-finish times, and/or little hands-on time. The end goal? Delicious, creative, satisfying Whole30 meals that wont keep you chained to your cutting board, stovetop, or oven.

Along the way, Ill also share my favorite Whole30 shortcuts: pre-packaged whole foods that help you prep faster, Whole30 Approved grab-and-go condiments to add flavor and keep things fresh, and kitchen tools that make almost any job easier and more fun.

Even chopping.

Finally, keeping in the spirit of fast and easy, Ill offer this last piece of Whole30 advice: Let good enough be good enough. Not every Whole30 meal has to be a from-scratch, candlelit, religious experience. Some days, you might be in the car with leftover .

This is all totally okay.

Did you stick to the Whole30 rules? Yes. Did you feed yourself a satisfying, nutrient-dense meal? Yes. Should we let good enough be good enough here, given our modern lives, busy schedules, and emotional capacity for picking thyme leaves off the stem one by one? HELL YES.

And with that, Ill leave you to it... but first, a quick refresher on the Whole30 program.*

Best in health,

MELISSA HARTWIG

What Is the Whole30?

Think of the Whole30 like pushing the reset button with your health, your habits, and your relationship with food.

The premise is simple: Certain food groups (like sugar, grains, dairy, and legumes) could be having a negative impact on your body composition, health, and quality of life without you even realizing it. Are your energy levels inconsistent or nonexistent? Do you have aches and pains that cant be explained by over-use or injury? Are you having a hard time losing weight no matter how hard you try? Do you have some sort of condition (like skin issues, digestive ailments, seasonal allergies, or chronic fatigue) that medication hasnt helped? These symptoms may be directly related to the foods you eateven the healthy stuff.
