You know when you take a photo to capture a gorgeous sunset on the beach or a bright skyline in a big city like New York, and then you go home and share those pictures with a friend or loved one? As you look at the photos with that person, you start to realize that the pictures dont adequately capture what you saw and felt in that moment. Scrolling through the photos, you exclaim, The photos dont do it justice! Well, thats how I feel when someone asks me about Inspiralized. Words like blessed and grateful immediately come to mind, but they dont do this feeling justice!
Every day, I get to help thousands of people find their healthy stride through spiralizing. Ironically, over these past three years, the Inspiralized community has helped me attain the healthiest, happiest, and most inspired version of myself. Their daily encouragement means more to me than theyll ever know. So first, to all of my loyal, kind readers and followersgrazie!
Aside from my #inspiralizedsquad, there are a few others who have supported me along this path and helped me grow Inspiralized bigger than I ever thought I could, and for that, Ill always be thankful.
To the Clarkson Potter team, thank you for ensuring this cookbook has a special place in the kitchens of so many home cooks. Doris, thank you for taking a chance on this Inspiralized dream of mine. Kate, Carly, and Erica, thank you for showing the world what this cookbook can do. To everyone behind the scenes (Stephanie, La Tricia, Amy, Mark, Alex, and Heather), this book is as much yours as it is mine, and I hope you feel as proud as I dowhat a labor of love!
And of course, thank you to my editor, Amanda Englander, for getting me and letting me be me! You took my haphazard spiralized recipe list and birthed it into this stunning must-have cookbook. You held my hand when I needed it and pushed me out there alone when I was ready. Thank you for being in my corner and teaching me to embrace shimmering oil and the Oxford comma. Cheers to many more champagne lunches with great news!
Alyssa Reuben (Sedrish!), thank you for being my sounding board and standing up for me and this crazy vision of mine. The unbelievable opportunities that keep coming my way since my first cookbook would not have happened if it werent for your trust in me. I cant wait to see what Inspiralize Everything brings. Next stop: world domination.
They say it takes a village, and it couldnt be truer! Thank you to the photography crew that brought life to my printed words. Even though I spiralize every single day, theyll never look as good as youve made them look in this book! Evan Sung, thank you for managing the show with absolute Zen-like composure. Youre a true star, a pro, and now a life-long friend. Your ability to make my home-cooked healthy meals look like something youd find on a plate in a Michelin-star restaurant is uncanny, and I cherish these photos almost as much as our laughs on set! Undoubtedly, this wouldnt have happened without the support of the rest of the teamprop stylist Carla Gonzalez-Hart, you scrunch up napkins and lay down spoons with such artistic precision, it amazes me, and food stylist extraordinaire Suzanne Lenzer, Im happy to have worked with such a talented woman, but most important, one who shares in my belief that a little olive oil, salt, and pepper is all you need.
Laura Arnold, thanks for testing all of the recipes in this cookbook, especially so quickly, and I hope youve been #inspiralized and dig the final product.
Meaghan, Meaghan, Meaghan. Meaghan Prenda, I love you like family! Amongst other things in my life (like my wedding, the Inspiralizer, and overall work-life balance), this cookbook truly would not have been possible without you. Your commitment to Inspiralized and me is humbling, and I am so grateful to have you on my team every single day to laugh and eye-roll with, vent to, bounce ideas off of, and to answer those emails with a smile. Im so excited for whats to come with this little brand were building together, and Ill forever be thankful for your kindness and hustle.
Felicia, youll always be my little sister, and Ill always want to make you proud. Im so happy you moved in next door in Jersey City so we can spend more time together, procrastinating on our workouts and drinking Karen Specials. Thank you for Inspiralizing all of your friends, because we all know youre more popular than I am. I love you so much, Feesh. And a special shout-out to Ben, who should be on the payroll, he promotes Inspiralized so much! You guys are a great team, and I cant wait to see what life brings us all. Wink, wink.
Dad, since my first book, youve become my business partner and the father-in-law to the love of my life. Im blessed to have you along in this Inspiralized journey. As I grow older, I realize more and more how alike we are, and Im proud to be like you! Im so happy I followed your footsteps into entrepreneurship. This life is so much better! And as this book publishes, well be celebrating your sixtieth birthday. Happy birthday, Dad!
Mom. WO-man. Youre my best friend, and Inspiralized would never have happened without you. Literally, you discovered spiralizing and brought it to me, but aside from that, you have been there for me every single step of the way, supporting and encouraging me. I know you believe in me and I carry that confidence with me in every aspect of my life. Thank you for welcoming Lu into the family last year and making me feel loved and cared for every day of my life. I can only dream of being as good of a mother as you are one day!
Grams and Pops. Your love and faith is beautifully infectious, and we need more of it in the world. Grams, thank you for being there for Poppy during this past beyond-tough year. I know you pray for everyone in our family, and its those prayers that keep us together. Youre the sweetest woman in the world, and I find inspiration in my everyday from the lessons youve taught me. Pops: Although devastatingly scary, your struggle with cancer has only proved that youre the strongest man in the world. Youve been through too much and continue to live life to its fullest with a optimistic perspective and a love for family and the good things in my life (like food!). I love you so much, and I have you in my heart everywhere I go.
Lu. I could fill this cookbook with how much thanks Id like to give to you. Instead, I figured Id immortalize a portion of the vows I wrote and made to you on our wedding day, by printing it in this cookbookbecause after all, this cookbook is filled with anecdotes and inspiration from our lives together!
