The original idea behind this recipe was using sweet potatoes, but squash are lower in calories. So, you can use butternut squash that is seasoned with taco-type spices and then roasted until they are crispy.

Serving Size: 4 Servings

Preparation Time: 50 minutes

Ingredient List:

  • 20 oz. of seeded & cubed butternut squash
  • 1/3 cup of onion, chopped
  • 1 cup of tomatoes, chopped
  • 4 oz. of cubed avocadoes
  • cup of cheddar cheese, shredded
  • 4 eggs, medium
  • 3 teaspoons of garlic powder
  • 1 & teaspoons of olive oil, extra virgin
  • teaspoons of paprika, smoked
  • teaspoons of cumin
  • Olive oil spray
  • No-stick spray
  • teaspoons of salt, kosher
  • Black pepper, ground, as desired
  • lime, juice only
  • cup of cilantro, chopped

Methods:

1. Preheat the oven to 425F.

2. Spray large baking sheet. Combine squash with salt, pepper, paprika, cumin, garlic powder and olive oil. Toss to coat well. Spread squash on baking sheet evenly. Roast until squash is tender and browned. Toss once while cooking.

3. Combine onions, tomatoes, salt & pepper, lime juice and cilantro in bowl. Set them aside.

4. Heat small skillet on med. heat. Spray lightly using olive oil spray. Add the eggs and season using salt only. Cover. Cook until they are done.

5. Layer 2/3 cup of squash, cup of cilantro, 1 egg, 1 ounce of avocado & 1 tablespoon of cheese in each bowl. Serve promptly.

Breakfast tacos are the perfect thing for weekend mornings. Squash are cooked for just a short time in a very hot pan, highlighting their flavor. Then they are tucked into the charred tortillas, along with juicy tomatoes and scrambled eggs.

Serving Size: 6 Servings

Preparation Time: 30 minutes

Ingredient List:

  • 1 yellow squash, small
  • 6 eggs, large
  • 1 zucchini, small
  • 6 tortillas, corn
  • cup of drained black beans
  • 1 tablespoon of olive oil, extra virgin
  • 1 cup of shredded cheese
  • 1 cup of quartered cherry tomatoes
  • Limes, salsa, green onions & cilantro to serve

Methods:

1. Crack eggs in small sauce pan. Add 2 tablespoons of water. Whisk fully, to combine whites & yolks.

2. Whisk while cooking on med-low for 10 to 15 minutes. Eggs should set and form large curds. Remove eggs and season them using salt & pepper.

3. While eggs are cooking, heat oil in large skillet on high heat. Add squash and zucchini. Cook on both sides until cooked through and charred lightly. Season using salt & pepper.

4. Wipe skillet clean. Replace on stove burner. Use water to sprinkle tortillas. Add to heated pan. Cook until both sides are charred lightly. Remove from pan. Wrap them in a towel.

5. For serving, divide eggs between tortillas. Use tomatoes, beans and squash to top the tacos. Top also with salsa, green onions & lime. Serve promptly.

(3) Cheesy Yellow Squash Toast

  • shaved yellow squash, medium
  • 8 oz. of pork chorizo, ground
  • 2 cups of shredded Gouda cheese
  • peeled & shaved onion, red
  • 1 loaf of bread, ciabatta
  • 5 tablespoons of butter, unsalted
  • Thyme leaves, fresh
  • 1 tablespoon of garlic salt
  • Sea salt
  • Black pepper, ground

Methods:

1. Melt 1 tablespoon of butter in saut pan on med. heat. Add onion. Cook for two or three minutes until it is transparent and limp. Transfer it to a bowl and reserve.

2. Using the same pan, break chorizo into small pieces as you cook until it is done all the way through. Drain on a paper towel-covered plate.

3. Split ciabatta break into halves. Spread both halves with 2 tablespoons of butter. Sprinkle them with garlic salt evenly. Top bread with Gouda. Add the cooked chorizo.

4. Top bread again, with cooked onion and shavings of squash. Season with salt & pepper and broil in the oven until the cheese has melted. Slice the bread into smaller pieces. Garnish with thyme. Serve while hot.
