(1) Italian Sausage, Onions and Peppers
This is a delicious yet simple recipe for sausage, onions and peppers. Families have been serving it for many years. If you want more kick, you can use some hot sausage along with sweet sausage.
Makes: 6 servings
Total Prep Time: 40 minutes including prep time
Ingredient List:
- 2 tablespoons of butter
- 6 x 4 oz. links of sausage, Italian
- sliced onion, red
- 1 sliced onion, yellow
- 1 sliced bell pepper, red, large
- 4 minced garlic cloves
- 1 teaspoon of basil, dried
- 1 sliced bell pepper, green
- cup of wine, white
- 1 teaspoon oregano, dried

Methods:
- Place sausage in medium skillet on medium high. Brown all sides. Take the sausage out of the skillet and then slice it.
- Melt 2 tablespoons butter in skillet. Stir in garlic, yellow onion and red onion. Cook for two to three minutes.
- Mix in the green and red bell pepper. Season with oregano and basil. Stir in the white wine.
- Cook while stirring until onions and peppers become tender.
- Place slices of sausage back in the skillet with veggies. Reduce the heat to low and cover the skillet. Simmer for about 15 minutes. Sausage should be heated all the way through. Serve hot.
(2) Egg Salad & Onions
Onions and eggs arent eaten together as often as bacon and eggs, but they make a great-tasting combination. Spring onions add a pleasing taste. This is especially tasty on buns or sourdough bread.
Makes: 4-6 servings
Total Prep Time: 35 minutes, including prep time
Ingredient List:
- 6 hard-boiled eggs, large, peeled, grated
- 2 spring onions, chopped into white and green bits
- Salt, Kosher
- Pepper, ground
- 1 tablespoon of mayonnaise
- Black olives and one bunch of watercress, for garnishing

Methods:
- Fry sliced onion gently in oil until it is starting to become soft and golden in color. Blitz it with a hand blender until it is smooth, and scrape it into a small bowl.
- Stir in pureed onion, along with mayo and grated egg. Season to your personal taste preference.
- Spoon egg salad into a medium serving dish. Serve with watercress and several black olives per serving.
(3) Almost Authentic Philly Cheese Steak
Philly cheese steak sandwiches are the greatest. To get a truly authentic one, you would have to travel to Philadelphia and fight the street traffic to get to a street vendor or restaurant that serves them. This recipe is a really close alternative, though.

Total Prep Time: 1 hour & 15 minutes including prep time
Ingredient List:
- 4 x 5-inch split sub rolls
- 1 lb. London broil, top round
- 2 peppers, green, cut in strips
- 3 tablespoons of oil, canola
- 2 sliced onions, medium
- 1 cup of provolone, shredded
- 1 cup warmed whole milk
- Salt, Kosher
- Pepper, fresh ground
- teaspoons pepper, cayenne
- 1 tablespoon flour, all-purpose

Methods:
- Wrap London broil in tight plastic. Place in freezer for about 40 minutes. You want it firm but you dont want to freeze it.
- Heat a large skillet on medium high. Add 1 tablespoon of canola oil. Add the peppers and onions. Season to taste with salt & pepper. Cook veggies until they are brown a bit, and soft. Reserve of the peppers and onions for another recipe you might create this week.
- Add a tablespoon of oil to a pot on medium heat. Stir in flour. Cook for 1-2 minutes. Add milk and whisk. Cool until it begins bubbling and thickening. Turn off heat. Whisk in cayenne and cheese, occasionally stirring as the cheese is melting. Cover the pan and keep it warm.
- Slice meat thinly with a sharp knife. Add remaining tablespoon of the oil and cook meat on medium high until its as done as you like it. Divide pepper and onion mixture on the rolls. Top them with meat and cheese sauce.
(4) Pasta Faggioli
This is a classic type of Italian soup that includes a tomato base with beans and pasta. Adding onion to the dish gives it a more pleasing and powerful taste. You can also add red pepper or anchovies, if you like.

Ingredient List:
- 1 chopped onion, small
- 2 chopped bacon slices
- 1 small chopped celery rib
- 1 minced clove of garlic
- 1 & cups of broth, chicken
- 1 thinly sliced carrot
- 1 x 16 oz. can tomatoes, drained, chopped
- 1 x 16 oz. can white beans, rinsed, drained
- 2 tablespoons parsley leaves, fresh, minced
- 1/3 cup of tubular pasta, small
- Grated Parmesan, to accompany meal
