There is a legend concerning how The Onion got its name.

It was 1988. Tim Keck and Christopher Johnson, two juniors at the University of Wisconsin, Madison, were sitting in Johnsons kitchen discussing what to name the parody newspaper they were about to launch. Johnsons uncle came in, saw that the two young men were making onion sandwiches, and said, Why not call it The Onion.

When I heard this legend, my first thought was, Thats the lamest story I ever heard! For Petes sake, if youre going to make up a legend, at least make it believable. Who eats onion sandwiches?

Since that time, however, I have learned that onion sandwiches are considered a delicacy in elite New York restaurants.

Ah yes, a friend of mine informed me, Ive enjoyed the onion sandwich as an appetizer at Beard House. They cut the crusts off two pieces of firm white bread, spread them with gourmet mayonnaise, attach them to each side of a crispy slice of onion, and then roll the edge through chopped parsley.

Well, Im sure horse manure would taste good slathered in Beard House mayo. Still, this makes the legend even less plausible since Keck and Johnson were hardly members of the jet set back in their college days.

Confronted with this objection, my friend pointed out that onions are also a traditional food of the very poor.
