1. Vietnamese Vegetarian Steamed Dumplings

Preparation time: 12 minutes

Cook time: 13 minutes

Servings: 6-7

Ingredients:

  • 30 vegan wonton wrappers
  • cup carrots, grated
  • 2-inch piece of ginger, minced
  • 1 onion, large, minced
  • cup carrots, minced
  • 1 teaspoon Vietnamese mint
  • cabbage, shredded
  • 1 tablespoon parsley
  • cup red bell pepper, minced
  • 1 teaspoon pepper
  • 1 tablespoon tamari sauce
  • 1 teaspoon salt
  • 1 tablespoon Hoisin sauce

Directions:

1. Wash your vegetables with water, then mince all ingredients into small pieces.

2. Add 2 tablespoons of vegetable oil to your wok. Add your minced carrots, ginger, onion, red bell pepper and cabbage into a wok.

3. Stir fry for about 3 minutes, then add your Hoisin and tamari sauce along with parsley and Vietnamese mint.

4. Continue to combine all of your ingredients and season with salt and pepper. Transfer mixture to a bowl and allow to cool.

5. Layer your wonton wrappers on a baking sheet.

6. Wet all sides of wrappers with water and place a tablespoon of mixed vegetables in the center of each wrapper.

7. Shape your dumplings as you desire. Now place your dumplings into your steamer in a layered fashion, then cook them for about 11 minutes. Serve dumplings warm and enjoy!

2. Fried Vietnamese Tofu Sweet Sour Sauce

Cook time: 15 minutes

Servings: 4-6

Ingredients:

  • 3 tablespoons olive oil
  • 500 grams tofu, diced
  • 1 teaspoon salt
  • 1 bunch of spring onions, chopped
  • 1 teaspoon chili paste
  • 3 tablespoons vegetable stock
  • 2 tablespoons tamarind paste
  • 1 tablespoon soy sauce
  • 2 tablespoons maple syrup

Directions:

1. Rinse and drain the tofu, then slice it into cubes and set aside. Chop your green onions and save for garnish.

2. In a small mixing bowl, prepare your sweet and sour sauce. Combine 2 tablespoons maple syrup, tamarind paste and 1 tablespoon of soy sauce.

3. Add chili paste and stir well to mix.

4. In your wok heat 3 tablespoons of olive oil. Once your oil is heated, add your prepared tofu to your wok. Stir-fry the tofu until it is golden on the outside.

5. Add your sweet and sour sauce into your wok and stir to mix it with fried tofu.

6. Cook for about 5 minutes set over low heat source. Serve with rice and enjoy!

3. Vietnamese Style Noodle Turkey Soup

Ingredients:

  • 2 Star anise
  • 1 cups turkey, fully cooked, shredded
  • 2 red chilies, thinly sliced
  • 2 cups chicken stock
  • 4 spring onions, thinly sliced
  • 1 piece of ginger root, thinly sliced
  • a sprinkle of mint, roughly chopped
  • 1 stick of cinnamon
  • a sprinkle of coriander, fresh and roughly chopped
  • 3 whole cloves
  • cup beansprouts
  • cup of rice noodles, dried
  • 2 limes juice only
  • 3 tablespoons of fish sauce

Directions:

1. Pour your chicken stock into a large pan. Add the star anise, ginger, cloves and stick of cinnamon.

2. Set heat to simmer and cook for about 10 minutes.

3. Soak the noodles according to the package directions. Once they are soaked, drain and rinse your noodles.
