Introduction
A combination of Western and Asian culture makes up Vietnamese cuisine. In the early days some Asian countries such as Malaysia, China and Thailand, brought different food supplies to Vietnam. Coconut milk, chili and soy sauce usage was then introduced and incorporated in Vietnamese cooking.
Western countries, later brought in the use of cakes, tomatoes and bread. France has the most influence in Vietnamese cuisine, presently a French vegan bread named Baguette has been popularized by the Vietnamese.
The use of herbs is another unique identity of the Vietnamese cuisine. Common herbs used are basil, coriander and mint. Health is a major priority in Vietnamese cuisine with special emphasis placed on vegetarian recipes. This is so, because majority of the Buddhist people in Vietnam are loyal to their doctrines.
Basic Garlic Noodles
If you are ever doubtful as to which dish to serve with your next Vietnamese meal, this is the perfect choice for you. Super delicious and incredibly easy to make.
Serves: 3-4
Time: 20 mins.
Ingredients:
- 20 oz. noodles (yellow)
- 1 tablespoon Parmesan cheese (freshly grated)
- Water (for boiling)
Garlic Sauce:
- 1 stick butter (unsalted)
- 2 tablespoons garlic (minced)
- 1 tablespoon Maggie seasoning
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar (white)
Directions:
1. Rinse noodles under running water. Drain and set aside for later use.
2. Next, add some water to a pot and bring to a boil. Once water starts boiling, add the noodles and let cook until soft. Remove, drain and set aside to dry.
3. Over low to medium heat, set a large sized pan. Add in butter and once it is fully melted add in the garlic. Cook until brown and aromatic.
4. Add in oyster sauce, Maggie seasoning, sugar and fish sauce. Stir to thoroughly combine. Remove from heat.
5. Add in cooked noodles and toss thoroughly to coat.
6. Top with cheese and serve immediately.
Hot and Sour Fish Soup
This is the perfect dish for you if you are a fish fan. Has that fragrant fish taste, topped with strong herbs and served with light noodles. Its a dish you will always want to make.
Serves:
Time: 45 mins.
Ingredients:
- 1 teaspoon coriander seeds
- 1 piece of ginger (small piece, thinly sliced)
- 3 cups of fish stock (preferably homemade)
- cup noodles (thin and rice variety)
- 2 tablespoons fish sauce
- 2 red chilies (deseeded and thinly sliced)
- 3 cloves garlic (thinly sliced)
- 1 cups prawns (tail on, raw and tiger variety)
- 7 ounces Salmon, cut into fillets small sized cubes)
- 4 onions (spring variety, finely chopped)
- 1 handful coriander leaves (fresh)
- 1 handful of mint leaves (fresh and roughly torn)
- 2 limes (fresh, juice only)
Directions:
1. Place coriander seeds and ginger slices into a medium sized saucepan.
2. Add in stock and bring this to a boil over medium heat. Allow to simmer for the next 5 minutes. Afterwards let stand for the next 10 minutes.
3. While your broth is simmering, cook noodles according to the directions on the package. Once cooked, drain and set aside to keep warm.
4. Return broth to a boil before adding in fish sauce, sliced chilies and sliced garlic. Reduce heat and simmer for the next 2 minutes.
5. After this, add in prawns and salmon fillets. Allow mixture to simmer for the next 5 minutes or until prawns and salmon fillets are firm and fully cooked through.
6. Add in onions, coriander and mint leaves and fresh lime juice.
7. Divide noodles among serving bowls. Next, divide your prawn mixture among serving bowls and season with stock. Serve right away and enjoy.
Vietnamese Style Lemongrass Chicken
This deliciously flavored chicken will have your guest asking for more. I doubt there will be any leftover for another day!
Serves:
Time: 12 mins.
Ingredients:
- 2 tablespoons fish sauce
- 3 cloves garlic (crushed)
- 1 tablespoon curry (powdered variety)
- teaspoon salt (for taste)
- 2 tablespoons + teaspoon of sugar (white)
- 1 pounds chicken breast (boneless, skinless and cut into small sized pieces)
- 3 tablespoons water (warm)
- 3 tablespoons oil (cooking variety)
- 2 stalks lemongrass (fresh and minced)
- 1 shallot (large, thinly sliced)
- 3 chilies (seeded and minced)
- 1 scallion (for garnishing)
Directions:
1. Using a large sized bowl, add in your minced garlic, fish sauce, dash of salt, powdered curry and dash of sugar. Stir thoroughly to combine before adding in the chicken. Toss to coat.
2. Then, add in the remaining sugar with at least a spoonful of water in a small sized skillet. Cook over high heat until the sugar fully dissolves. Continue to cook until mixture turns caramel in color.
3. Remove from heat and add in two more spoonful of water. Transfer this mixture into a small sized bowl.
