Chapter one: Vietnamese Breakfasts Recipes
Xi Vo
Xi v is a sweet, simple breakfast consisting of glutinous rice, coated with mung beans. Sticky rice has shorter grains, and contains more carbohydrates. This creates a unique consistency thats immensely satisfying.
Ingredients:
3 cups sticky rice
3 cups split mung beans
3 teaspoons sugar
2 teaspoons salt
For the sweet, sesame sauce:
4 tablespoons sugar
1 teaspoon salt
4 tablespoons sesame seeds
PROCEDURE:
- Soak the sticky rice and mung beans in separate bowls for 4 hours.
- Drain the mung beans well. Steam for 20 minutes, or until cooked through, then mash.
- Drain the sticky rice well.
- In a large bowl, combine sticky rice and mung beans. Season with salt and mix until incorporated thoroughly.
- Steam the mixture until the rice is partially cooked around 15 minutes.
- Remove from heat and add sugar. Toss the mixture carefully, taking care not to destroy the grains.
- Bring back to the heat and steam until fully cooked through. Youll know its done when the grains are clear
and separated they shouldnt stick together. The rice should be tender, not mushy, and taste slightly sweet.
- While waiting for the rice to cook, start preparing the sesame sugar. Roast the sesame seeds on a dry pan on medium high heat. It should take 30 seconds to 1 minute.
- Using a mortar and pestle, pound the roasted sesame seeds to release its fragrance. Add the sugar and salt. Mix thoroughly.
- The rice can be served by itself. If you prefer your Xi v sweet, add a sprinkling of sesame sugar.
Serves : 8
Cho g
Cho g is a hearty chicken congee or rice porridge. Highly nutritious and filling, its perfect for cold, rainy mornings. For this recipe, you can substitute the poultry seasoning with a custom spice/herb blend of your own to give it a unique taste.
Ingredients:
3 cups water
cup glutinous rice
1 cup long grain rice
