F irst and foremost , I want to give you a massive thank you for purchasing my book, Colombian Cookbook: Traditional Colombian Recipes Made Easy. Colombia is a little country situated right between the Caribbean and the Pacific Ocean. Over the course of a few thousand years, this amazing place has been heavily influenced by its neighboring countries (with emphasis on Spain, and quite interestingly, Africa).

This collaboration of nations has created a country unique onto its own, full of amazing tradition, gorgeous history, and incredibly happy and helpful people. Combine this with some of the most picturesque scenery on the entire planet, and you have what can only be described as a holiday goers dream destination. It truly offers more than can be described in mere words. And of course, I should also add that the food is to die for. With this in mind, Colombian cuisine is essentially the assimilation of cooking traditions harbored from both its neighboring countries and its native people. This has led to the development of famous dishes that are colorful, tasty, healthy, and full to the brim with aromatic spices and flavors that cannot be found anywhere else in the world.

Some of the most common ingredients appearing within traditional Colombian cooking are legumes, tubers, maize, and rice. While these alone may sound a little bit lackluster, it is important to state that in traditional Colombian cooking that they are frequently combined with local fruits, meats, and fish thus creating a complex array of flavors that can only be described as a delight to the taste buds. Over the last thousand years or so, Colombian cooking has evolved from simply being food to something so much more. It has slowly become one of the most important aspects of this amazing countries culture. It is used to express the history and depth of this great nation, and then share it with friends, family, and visitors alike. So, if you are looking for south American cuisine that not only integrates influence from other incredible nations, but also appreciates the rich history from which it is derived from, then I can assure that you have found the right book.
