Colombia is a diversified country with many interesting food choices. They love their rice, coconut, avocado, tomato, corn, cornmeal, meat and beans. Whatever is the dish, you will see glimpses of these above ingredients in almost all of their cooking. They love using fresh ingredients. Whenever you make dishes using fresh ingredients, it uplifts the dish.

They love their desserts and they do not hold back on sugar. They use panela, which is a popular form of sweetener in Colombia. Colombia is world famous for its coffee. The traditional way of making Colombian coffee is using panela instead of sugar in it. If you cannot find panela around where you live, you can substitute it with brown sugar.

They enjoy avocado in almost everything. Be it a curry, soup, stew or a wrap, and they add avocado slices in it. They love tomatoes, and you will see tomatoes in most of their dishes. The use of corn and cornmeal is noticeable too. Cornmeal adds a different texture to anything you cook with it.

Serving Size:

Cooking Time: 40 Minutes

Ingredients:

  • 5 cup water
  • 3 tbsp Colombian coffee powder
  • 1 cup panela

Instructions:

Crumble the panela using your hands. In a pot add the panela. Pour in the water.

Bring the mixture to boil. Simmer for about 30 minutes.

Add the coffee powder and brew for 5 minutes. Keep stirring continuously.

Serve hot.

Pasta is not only liked by kids but also adults. When you add beef or any other meat here, it becomes irresistible.

Serving Size:

Cooking Time: 20 Minutes

Ingredients:

  • 1 lb. penne pasta
  • 1 cup minced beet
  • 1 red onion, sliced
  • Fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 1 tomato, diced
  • 1 tsp soy sauce
  • 1 tsp tomato sauce
  • 1 tbsp olive oil

Instructions:

Boil the penne pasta for 8 minutes in salted water.

Drain well. Rinse off the extra water.

In a wok, heat the olive oil. Fry the onion for 1 minute.

Add the tomato, soy sauce and tomato sauce. Toss for 1 minute.

Add the diced tomato and minced beef. Cook for 5 minutes.

Add salt, pepper and stir well. Add the penne pasta and cook for another 3 minutes.

Serve hot with parsley on top.

Serving Size:

Cooking Time: 50 Minutes

Ingredients:

  • 1 cup rice
  • 1 cup diced beef
  • 1 can black beans, drained
  • 1 cup cubed potatoes
  • 1 cup cubed carrots
  • 1 white onion, diced
  • 4 cup mushroom stock
  • Salt to taste
  • Pepper to taste
  • 1 tsp cumin
  • 1tsp coriander
  • 1 tsp red chili powder
  • 1 tsp turmeric
  • 2 green chilies cut in half
  • Fresh coriander, chopped, to serve
  • Avocado slices to serve

Instructions:

Cook the rice with salted water for 15 minutes or until it is well cooked. Drain and set aside in a warm place.

Discard the bone of the beef. In a large pan, add the oil

Sear the meat for 3 minutes.

Add the black beans, onion, all the spices and stock.

Cover and cook on high heat for 20 minutes.

Add the rest of the ingredients and cook for another 15 minutes.

Serve the rice with beef beans. Add avocado slices and coriander on top.

Colombian Shrimp and Veggie Rice

This is a popular Colombian take on the regular fried rice recipe. You can be as creative as you want and add any type of veggie you want.

Serving Size:

Cooking Time: 20 Minutes

Ingredients:

  • 1 cup medium shrimp
  • 1 cup brown rice
  • 1 cup sliced bell pepper
  • 1 red onion, sliced
  • Salt to taste
  • Black pepper to taste
  • 2 tsp soy sauce
  • 1 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 tbsp olive oil

Instructions:

Cook the rice in salted water for only 5 minutes. Drain well and pour cold water on top. Set aside for now.

Remove the skin of the shrimp. Devein it.

In a large wok, heat the olive oil.

Add the red onion and toss for 2 minutes.

Add the shrimp and cook for 2 minutes.

Add the bell pepper and toss for another minute. Add salt, pepper, soy sauce, Worcestershire sauce and stir well.

Add the rice and cook for 5 minutes. Serve hot.

Colombian Spicy Chicken and Potatoes

Chicken and potatoes is a killer combination cannot go wrong.

Cooking Time: 30 Minutes

Ingredients:

  • 2 lb. chicken
  • 2 cup diced potatoes
  • 1 cup white onion, sliced
  • 2 garlic cloves, minced
  • 1 inch ginger root, minced
  • 1 cinnamon stick
  • Fresh parsley, chopped
  • 2 cardamoms
  • Salt to taste
  • Black pepper to taste
  • 1 tomato, diced
  • 2 red chilies, chopped
  • 1 tsp tomato sauce
  • 2 tbsp olive oil
  • 1 tbsp red chili powder
  • 1 tsp turmeric
  • 1 tsp cumin
