Introduction
Thai cuisine is all about eating fresh and healthy. There are hardly foods that are junk. Most of the time they incorporate good herbs, and spices to boast their immunity system. They do consume carbohydrate without guilt. This is the reason you will find rice flour in most of their desserts. They add palm sugar, brown sugar and rock sugar to their desserts.
Coconut is a key ingredient in the Thai cuisine. The land has many coconut trees and therefore their cuisine reflects that. Coconut milk is added to most of their stews, soups and curries. It does add a lot of flavor to the dishes. Another important element is the Thai chili paste. They make it fresh every time. When you make a batch ahead of time and freeze it, it does not retain the earthiness and the flavors as the fresh one.
Pandan leaves are another important element in their food. It has many health benefits too. You would also find a lot of betal leaves, mushrooms, chicken, duck, soy sauce, fish sauce, lettuce and bean sprouts in their cuisine.
Of course, Thai cuisine would not be complete without the mention of noodles! They have it in salads, noodle bowls, noodle soup, noodle stews etc. You name one noodle variation and they have it in their cuisine. Rice noodles and ramen are the two most popular ones out there.

Thai Recipes
Thai Iced Tea
Thai iced tea is not only popular in Thailand alone! Is has found a good stand in the global culinary. People from all over the world enjoy this cold tea during hot days.

Cooking Time: 10 Minutes
Ingredients:
- 6 tea bags
- 3 cup water
- 1 cup sugar
- Fresh mint
- 1 cup ice cubes
- 1 cup milk
Instructions:
Boil the water and add the tea bag. Simmer for 5 minutes.
Discard the tea bags. Add the sugar and mix well.
In a serving glass, add the ice cubes.
Pour in the brewed tea. Add the milk. Add mint on top and serve.
Crispy Chicken Salad
Nothing is better than a great crispy chicken salad with a fresh hint of fruits. Thailand has a good variety of apples and here they have used Gala apples.

Ingredients:
- onion, sliced
- 1 Gala apple, cut into matchsticks
- Kosher salt to taste
- cup olive oil
- 1 cup chicken breast
- cup dried sour cherries
- 1 tbsp fish sauce
- 1 tsp lime zest, grated
- 1 tbsp lime juice
- 1 cup parsley, chopped
- cup roasted peanuts
- Pepper to taste
Instructions:
Discard the skin of the chicken. Season it with salt and pepper.
Heat some oil in a saucepan and fry the chicken golden brown. Shred the chicken finely.
In a mixing bowl, blend the chicken, apple, parsley, lime juice, fish sauce, peanuts, salt, pepper, and sour cherries.
Mix well and serve immediately over rice.
Mussels Curry
Thai people love their seafood. They usually have it in a coconut curry sauce. This is a traditional red curries mussels recipes.

Ingredients:
- 2 pounds mussels, cleaned
- 2 cup coconut milk
- 1 celery stalk, sliced
- 1 cup crushed tomatoes
- cup apple cider vinegar
- 1 tablespoon Thai red curry paste
- 1 carrot, julienned
- 4 tablespoons basil, chopped
- 1 onion, sliced
- Salt and black pepper to taste
- 2 tablespoons parsley chopped
Instructions:
In a pot add the coconut milk.
Add in the vinegar, tomatoes, Thai curry paste and half the basil.
Cook for 8 minutes on high heat.
Add the mussels and cook for 5 minutes.
Take off the heat. In another pan, heat some oil and add the celery, onion, carrots, salt and pepper. Simmer for 5 minutes.
Serve the mussels with the crunchy veggies. Garnish using parsley.
Thai Giant Prawn
Thai people love their seafood. This is a classic Thai style prawn fry recipes.

Ingredients:
- 2 pound giant prawns
- 2 tbsp soy sauce
- Salt to taste
- Pepper to taste
- 3 tbsp olive oil
- 2 tbsp fish sauce
Instructions:
Marinate the giant prawns using fish sauce, soy sauce, salt and pepper.
Let it sit for 10 minutes.
In a wok heat the oil. Add the prawn. Toss for 8 minutes.
Serve.
Pad Prik King

- 1 pound green beans, trimmed
- 10 dried New Mexico chiles
- 2 cup extra-firm tofu
- 5 garlic cloves, minced
- 1 -inch piece galangal, chopped
