Brussel Sprouts with Bacon and Kimchee Puree by David Chang

David Chang is famous for his western Asian fusions, and this Brussel Sprouts recipe with Bacon and Kimchee Puree is one of the best from his Momofuku cookbook. It is a simple recipe that elevates the ordinary and not so liked Brussel sprouts. The kimchee puree adds a distinct yet delectable taste that will surely keep you wanting for more.

Cooking Time: 35 minutes
Ingredients:
- 1 lb. trimmed brussels sprouts
- lb. bacon.
- 2 tbsp
- 1 cup pureed Cabbage Kimchi
- Freshly ground black pepper and salt
- 1 cup carrots (Julienned)
Directions:
1. Preheat oven to 400
2. Cut the Brussel sprouts into halves. Set aside.
3. Chop the bacon into 1 inch long pieces
4. Cook the bacon over medium heat in an ovenproof skillet. Stir occasionally for 4 minutes. Set aside in plate lined with paper towels.
5. Remove excess bacon fat residue then add Brussel sprout in the same skillet. Increase heat to high and wait until sprouts start to sizzle.
6. Transfer the skillet with sprouts to the preheated oven.
7. After 8 mins, redistribute the sprouts by shaking the skillet. Return it to the oven for 10-15 mins more.
8. Place the skillet back to the stovetop at medium heat. Add in bacon and butter slowly season with pepper and salt to taste.
9. Place the pureed kimchee equally into four bowls. Distribute the Brussels sprouts evenly on top of the pureed kimchee. Use julienned carrots as a garnish then serve.
Mexican Paella by Rick Bayless

This Mexican paella loaded with spicy freshly ground pork sausage and chorizo that will make your mouth salivate and your stomach full of savory goodness. This recipe is from Chef Rick Bayless.
Serving Size:
Cooking Time: 1 hour 30 minutes
Ingredients:
- 3 cup chicken broth (low sodium)
- Salt
- 1 Poblano Pepper (large)
- 15 ounce roasted diced tomato
- cup olive oil
- medium chopped onions
- 4 ounces spicy chorizo sausage (removed from casing)
- Peeled and finely chopped three cloves garlic
- 2 cups rice (medium grain)
- 1 lb scrubbed mussels
- 1 cup peas
- 2 tbsp flat-leaf parsley (chopped)
- Optional: 2 tbsp silver tequila
Directions:
1. Char the Poblano pepper for 5 minutes. Remove the charred outer skin and separate the seed and stem. Cut into inch strips. Set aside for later.
2. Blend the tomatoes in a blender until smooth.
3. Preheat oven to 325
4. In a 12 inch pan for paella, heat olive oil. Place the seasoned chicken on the skillet skin side. Cook for 10 minutes. Remove when golden brown, then add in garlic and continuously stir for 1 min.
