Breakfast
Breakfast Cupcakes
Who said cupcakes need to only be sweet? These cupcakes have the best of both worlds, a little sweet and a little savory. Yields: 12 servings Ingredients :
For the Cupcakes 7 oz. sausage links, sliced 1 (8 oz.) package shredded cheddar cheese 1/2 cup ricotta cheese 6 large eggs 1/4 tsp. salt 12 mini waffles, toasted For the Icing 1/3 cup butter 6 oz. cream cheese 2 1/2 cups confectioners sugar 2 tbsp. maple syrup Method of Preparation :
  1. Preheat oven to 375 degrees.
  2. Combine the first 5 ingredients (up to salt) in a bowl.
  3. Place each waffle in the bottom of a non-stick muffin cup.

    Top with equal portions of sausage mixture of step 2.

  4. Bake for 18 minutes and let cool then remove from pan.
  5. Combine all icing ingredients and beat until smooth. Cover cupcake with icing thoroughly.
Breakfast Sausage Casserole
Breakfast of champions! This hearty dish is a perfect base for days of heavy labor. Yields: 12 servings Ingredients :
1/2 loaf of white loaf bread, cut into 1 in. cubes
1 lb. fresh pork sausage
10 oz. dry mustard
1 tsp. salt
5 large eggs, beaten
Method of Preparation :
  1. Spread bread in the bottom of a greased casserole dish.
  2. Cook sausage in a skillet over medium heat.
  3. Spread sausage over bread and top with cheddar cheese.
  4. Combine remaining ingredients in a bowl and pour mixture over cheese.
  5. Cover and refrigerate overnight.
  6. Once refrigerated, preheat the oven to 350 degrees.
  7. Bake the covered casserole for 50 minutes. salt
    5 large eggs, beaten
    Method of Preparation :
    1. Spread bread in the bottom of a greased casserole dish.
    2. Cook sausage in a skillet over medium heat.
    3. Spread sausage over bread and top with cheddar cheese.
    4. Combine remaining ingredients in a bowl and pour mixture over cheese.
    5. Cover and refrigerate overnight.
    6. Once refrigerated, preheat the oven to 350 degrees.
    7. Bake the covered casserole for 50 minutes.

      Remove from heat and let cool for 15 minutes.

    Breakfast Sausage with Pepper Gravy
    This recipe is great for those days where you want quality over quantity. A simple, yet sophisticated way to enjoy your breakfast sausage. Yields: 6 servings Ingredients:
    1 tbsp. extra-virgin olive oil
    1 lb. breakfast sausage
    3 scallions, sliced
    1 bell pepper, diced
    Salt and freshly ground pepper
    1 tbsp. flour
    1 clove garlic, minced
    1/2 tsp.

    Worcestershire sauce
    1/8 tsp. ground allspice
    3/4 cup low-sodium chicken broth
    1 1/4 cups milk
    Method of Preparation :

    1. Heat the oil in a large pan over medium-high heat. Add the sausage and cook for 10 minutes. Place sausage in plate.
    2. To make gravy, add scallion, bell pepper, salt and pepper to skillet and cook for 5 minutes. Reduce heat to medium and add remaining ingredients; stir, cook for 6 minutes.
    3. Serve sausage and top with the gravy.
    Cheddar Sausage Cornmeal Waffles
    This dish is not your traditional waffle; its packed with some heat and topped with a fried egg. baking soda 1 tsp. smoked paprika 1/2 tsp. baking powder 1/4 tsp. chipotle chile powder 2 cups buttermilk 4 tbsp. maple syrup 2 tbsp. olive oil 2 tsp. sriracha 4 Sausage Patties, cut into small pieces 1/2 cup shredded Mexican blend cheese 4 large eggs, fried Method of Preparation :
    1. Preheat the waffle iron.
    2. Combine the first 6 ingredients (until chile powder) in a large bowl.
    3. Combine the next 4 ingredients (until sriracha) in another bowl.
    4. Pour the mixture from step 3 into mixture from step 2 and stir to combine. sriracha 4 Sausage Patties, cut into small pieces 1/2 cup shredded Mexican blend cheese 4 large eggs, fried Method of Preparation :
      1. Preheat the waffle iron.
      2. Combine the first 6 ingredients (until chile powder) in a large bowl.
      3. Combine the next 4 ingredients (until sriracha) in another bowl.
      4. Pour the mixture from step 3 into mixture from step 2 and stir to combine.

        Add sausage and cheese and combine.

      5. Pour mixture into waffle iron and cook according to waffle iron directions.
      6. Top waffles with a fried egg and serve.
      Sausage and Tater Tot Skillet Bake
      A kids favorite; something about the crunch and saltiness of the tater tots that gets them every time! Yields: 6 servings Ingredients:
      1 (12 oz.) Pork Sausage Roll 1/2 cup onion, chopped 6 cups tater tots, frozen 6 eggs Salt and pepper, to taste 2 tbsp. fresh parsley, chopped Method of Preparation :
      1. Preheat oven to 400F.
      2. Crumble sausage and cook in a large cast iron skillet over medium high heat for 5 minutes. Add onions and tater tots and continue cooking for 5 more minutes.
      3. Place in the oven and bake for 10 minutes. Remove from oven.
      4. Mold 6 small cavities in the mixture. Crack an egg over each one and return to oven for 15 more minutes. Season to taste, and garnish with parsley.
      Sausage Egg Boats
      This recipe offers a creative and fun way to serve breakfast.

      Having a French bakery nearby with quality baguettes is a plus! Yields: 4 servings Ingredients :
      4 sourdough baguettes 1 (7 oz.) package Sausage Links, cut into in. pieces 8 eggs 1/2 cup heavy cream 8 oz. pepper jack cheese, grated 3 green onions, thinly sliced Salt and pepper, to taste
      Method of Preparation :

      1. Preheat oven to 350F.
      2. Without slicing through the bottom, cut down the middle of each baguette. Remove inside bread until you leave 1/2 in. of bread along the borders. Set baguettes aside.
      3. Cook sausage according to package directions.
