Introduction
Hunting and fishing are most probably the oldest hobbies in Siberia. People enjoy them till today and these have influenced their food habits also. The local dishes combine wild meat and fishes with unique herbs and fruits. The Siberian style meat is typically salted, cooked with the help of wooden bars on hot coals and smoked with taiga herbs along with spices like fern, and garlic.
It is then enjoyed with cranberries and cowberries. The most exotic dish from the Siberian cuisine has to be bear paws. They marinate the bear paw then fry them. Afterwards, they stew it for hours. It is served very hot and nor for the faint hearted. Popular fish dishes include raw delicacies such as Stronganina, frozen chopped fishes flavored with salt, spices, onion and vinegar.
Zagutai is fish fillets placed in a salt solution and then layered into a can with onions, black pepper, vegetable oil and sometimes mayonnaise or mustard. Cookies with nuts are consumed as snacks or as a dessert. Burduk Kissel, another sweet dish is made out of bread dough residue, fruit juice and starch.
Palacinke or Serbian Pancake
Pancake is one of the most commonly consumed breakfasts around the world. What makes Serbian pancake unique is their technique of making it. Serving Size: Cooking Time: 15 Minutes Ingredients:
- 1 cup all purpose flour
- A pinch of salt
- 1 egg
- 1 cup sliced strawberries
- 3 tbsp melted butter
- 1 drop of strawberry extract
- cup cranberries
- 4 tbsp maple syrup
- cup warm milk
Instructions: In your mixing bowl, beat the egg with the maple syrup.
Add the milk and beat for 1 minute. Add the strawberry extract, melted butter and mix again. Finally add the dry ingredients and mix into a smooth batter. In a nonstick pan, fry them in a thin crepe style. Serve them with cranberries, strawberries and more maple syrup if desired.
Orehnjaca or Serbian Nut Roll
This tastes is so amazing that you would love to have this nut roll for breakfast, and dessert.
It is light and not too sweet. When you slice into the roll, it looks very appealing too. Serving Size: Cooking Time: 20 Minutes Ingredients: For the Dough:
- 2 tablespoons yeast
- 1 tablespoon sugar
- 1/2 cup warm water
- 2 eggs
- 1 cup evaporated milk
- 2 cups cake flour
- 1 tsp baking powder
- 4 tbsp Nutella
- 2 tbsp icing sugar
- 1 tbsp cinnamon powder
Instructions: Combine yeast with warm water and sugar. Mix well and let it rise for 10 minutes. Add the flour, baking powder, and eggs. Knead into dough.
Cover and let it rise for 1 hour. Roll it out and spread the Nutella, cinnamon and icing sugar generously. Fold from one edge to another. Place on a greased baking tray. Bake for 20 minutes with 350 degrees F. Let it rest for 30 minutes.
Cut into slices and then serve.
Cranberry Pancake
Serbians enjoy cranberry pancake as a breakfast because the sweetness of the cranberries makes their pancake eating experience better. Sometime fresh yogurt is added on top. Serving Size: Cooking Time: 15 Minutes Ingredients:
- 1.5 cups cake flour
- 2 eggs
- 1 tsp yeast
- 1 pinch of salt
- 1 tbsp sugar
- 1 cup warm milk
- melted butter
- cup cranberry compote
- Fresh cranberries to serve
- Cranberry syrup to serve
Instructions: Whisk the eggs in a bowl. Add the butter and mix well. Add the cranberry jam and mix well.
In another bowl, combine the yeast, sugar, salt, warm milk, and mix well. Let it rise for 10 minutes. Add the flour, and fold in well. Combine the flour mix with the egg mix. The batter should be runny and smooth. Fry the pancakes in batches in a nonstick pan.
Serve warm with more cranberry syrup and fresh cranberries on top.
Pogacha Bread
Pogacha is a traditional Serbian round loaf. The texture is soft and fluffy. It contains good amount of butter, sugar and pure milk. Serbians love it with their special homemade sauce. Serving Size: Cooking Time: 15 Minutes Ingredients:
- 2 tsp active dry yeast
- 1 cup warm milk
- 1/4 cup butter
- 2 tablespoons sugar
- 1 tbsp baking powder
- tsp salt
- 5 cups all-purpose flour
Instructions: Combine the warm milk with sugar, salt, yeast and stir well.
Add a lid and keep in a warm place. Let it rise for 1 hour. Add the flour, baking powder and butter. Knead it until it becomes very soft. Add a lit and let it rise for 1 hour. Knead again for about 4-5 minutes.
Add to a greased pan. Bake for about 20 minutes with 300 degrees F. Let it rest for 20 minutes. Cut into triangles and then serve with Serbians special sauce.
