Introduction
Bulgarians are proud of their rituals, culture, and care for their folklore, no wonder you will see an abundance of these in their food too. The food they make is special because they are true to their origin. The food they prepare is very authentic to their root, and any moderation in them still keeps the authenticity intact.
Their national dish is Shopska Salad, a dish that is too simple and takes less than 5 minutes to make. Something so simple that you can have every day, and it has good health benefits too. The Bulgarian white cheese is what makes this salad so special.
Another dish that is simple yet very famous in Bulgaria is Tarrator, which is a cold soup made with cucumber and yogurt. Different types of herb and spices are added according to the taste. This is often served as a side or as a snack.
Bulgaria has many variations of bread, and people not only have those bread during breakfast, but they also accompany their lunch and dinner with one of these loaves of bread sometimes.

Bob Chorba Lentil and Veggie Soup
Bob Chobra is a classic Bulgarian Soup recipe using white beans. Here there is a little twist by adding vegetables and lentils to make it more delicious.
Cooking Time: 40 minutes
Serves: 4
Ingredients:
1 cup white beans, soaked overnight
1 cup lentils
1 carrot, cubed
2 tbsp scallions, chopped
Salt and pepper to taste
1 tsp paprika
cup celery, diced
4 cups water
tsp oregano
1 tsp oil
Instructions:
1. In a large pot, add the white beans, lentils with the water. Cook on high heat for 30 minutes.
2. Add the carrots, paprika, celery, oregano, oil, salt, pepper, scallion, and stir well. Cook for 10 minutes.
3. Serve hot with more pepper on top.
Bulgarian Kofta
This is a traditional Bulgarian meat based dish that is mostly served as a appetizer but if you add a salad and bread with it, it can be a main course too. It is typically made using lamb or beef.
Cooking Time: 15 minutes
Serves: 8 koftas
Ingredients:
1 cup minced beef
1 egg
tsp oregano
tsp garlic powder
tsp sage
Salt and pepper to taste
1 tbsp corn flour
Oil for frying
Instructions:
1. First, in a mixing bowl, combine the minced beef with the egg.
2. Add the salt, pepper, corn flour, sage, garlic and oregano. Mix well.
3. Use your hands to make medium sized koftas.
4. In a grilling pan, add the oil and grill the koftas for 3 minutes on each side.
5. Serve hot with bread and a salad of your choice.
Bulgarian Mish Mash
This dish is called Mish Mash, and it is made using eggs and summer vegetables. Feel free to add your choice of vegetables in this recipe.
Cooking Time: 15 minutes
Serves: 2
Ingredients:
4 eggs
cup Bulgarian white cheese, grated
2 jalapenos, sliced
2 tbsp spring onion, chopped
1 white onion, chopped
4 plum tomatoes, chopped
2 zucchinis, chopped
1 tbsp oil
Salt and pepper to taste
1 pinch cumin
1 pinch turmeric
1 pinch paprika
Instructions:
1. First, in a bowl, mix the eggs with salt, pepper.
2. In a wok, add the oil and toss the onion, zucchini, and tomatoes for 3 minutes.
3. Add the eggs and toss for 3 minutes.
4. Add the jalapeno, paprika, turmeric, cumin, spring onion and white cheese.
5. Sprinkle some more salt and pepper and toss for 2 minutes. Serve hot.
Bulgarian Fried Pancake
Pancake is perhaps the number one consumed breakfast around the world, but Bulgarians like it fried! These fried pancakes taste very good and are a delight to look at too.
