Ingredients:

  • 2 cups Longhorn cheese
  • 6oz. can tomato paste
  • 8 oz. can tomato sauce
  • 1 tsp oregano, ground
  • 1/4 cup water
  • 1/2 tsp. garlic salt
  • 1/2 tsp ground pepper
  • 1 jalapeo chili, cut into thin strips
  • Butter for frying
  • 12 flour tortillas

Instructions:

1. In a saucepan, combine water, tomato paste, oregano, salt, ground pepper, and jalapeo.

2. Cook until sauce thickens and bubbles.

3. Cover and simmer for 10 minutes.

4. Heat butter in a skillet. Ensure that it is enough to fry a flour tortilla.

5. Place a tortilla in a skillet, spoon sauce onto the tortilla and sprinkle some cheese over the sauce.

6. When cheese starts to melt, place another tortilla on top then add butter.

7. Turn over tortilla to fry.

8. When both sides of the tortilla turn brown and crispy, remove from heat and place on a plate.

9. Repeat the procedure for all the rest of the tortillas and until the sauces are used.

10. Place the 6 fried tortillas on a large baking sheet.
