Great cookbook! I first checked this cookbook out of the library and enjoyed reading the information and recipes so much I decided to purchase my own copy! The book was complete as it gave information on all the pantry spices, etc. needed, beautiful pictures of the final product, and clear instructions. I shared with three Mexican fellow workers and was informed that not only was the book beautiful, it was authentic!
Best Ever!!! I would recommend this cookbook to everyone. The recipes are delicious and not too difficult, and my family loved everything I made.

The most delightful and favorite corn dish is a tortilla. Rice and beans are also well-known in Mexico. The color of the beans (red or black) depends on the region of the country. Preparation time: 10 minutes Cooking time: 30 minutes Servings: 5 Ingredients cup cherry tomatoes 1 jalapeno pepper 1 cup chicken stock 1/3 teaspoon salt 1 teaspoon minced garlic 1 tablespoon olive oil 1 red onion 3 tablespoon sour cream 2 tablespoon fresh parsley 3 cup tortilla chips 5 eggs Directions
  1. Remove the seeds from the jalapeno pepper.
  2. Chop the cherry tomatoes and jalapeno pepper.
  3. Place the chopped vegetables in the food processor.
  4. Add salt, minced garlic, and fresh parsley.
  5. Blend it until you get smooth and homogenous mass.
  6. After this, add the chicken stock and pulse the mass for 30 seconds more.
  7. Peel the onion and chop it.
  8. Pour the olive oil in the pan and preheat it well.
  9. After this, toss the chopped onion in the preheated oil and add the blended mass.
  10. Simmer it for 10 minutes on the medium heat.
  11. Then add sour cream and tortilla chips.
  12. After this, beat the eggs in the pan and close the lid.
  13. Cook the dish until the eggs are cooked or approximately for 10 minutes more.
  14. Serve the prepared dish immediately.

  1. Chop the bacon and toss in the pan.
  2. Start to preheat the bacon. Add butter.
  3. Roast the bacon for 2 minutes on the medium heat.
  4. After this, crack the eggs into the skillet and cook them for 1 minute on the medium heat.
  5. Scramble the eggs and cook the dish for 2 minutes more.
  6. Meanwhile, shred Cheddar cheese and melt it in the water bath.
  7. When the scrambled egg mixture is done combine it with the melted cheese.
  8. Add salsa, salt, and oregano.
  9. Sprinkle the mass with the paprika and churn it.
  10. Fill the tacos with the prepared scrambled egg mixture directly before serving.

  1. Chop the bacon and sprinkle it with the salt, paprika, and chives.
  2. Mix the mixture and toss it in the skillet.
  3. Add olive oil and roast it for 2 minutes on the medium heat.
  4. Beat the eggs in the bowl and whisk them well.
  5. Add parsley, ricotta, and heavy cream.

    Stir the mixture.

  6. Slice the tomatoes.
  7. Pour the egg mixture into the skillet.
  8. Add sliced tomatoes and close the lid.
