Introduction
If you are a person who isnt lucky enough to live within Mexico, it does not mean you can enjoy authentic Mexican food whenever you wish. While Mexican food can be crafted by someone with virtually no idea of how Mexican food is prepared, if you do not have the right ingredients or cooking tools, it can prove to be a challenge. Luckily for you, you can learn how to prepare Mexican food from someone who actually lived in Mexico for a short time.
My experience with Mexican cuisine started years ago when I first began working at my first restaurant job: a Mexican restaurant in the heart of L.A. There I learned the tricks of the trade and from a Mexican family that taught me that Mexican food was more than just a couple of ingredients. They taught the love that was required to prepare the foods and taught me a few techniques that you will not learn anywhere else.
Throughout the pages of this cookbook, I will share with you the tips and tricks I learned to making authentic Mexican food. Inside of this Mexican cookbook, not only will you learn how to properly prepare Mexican food, but you will also have access to over 25 of the most delicious and authentic Mexican recipes to help you become a professional Mexican chef.

Salsa Verde Chicken
To kick things off, we have a traditional and delicious chicken dish that you will find hard to resist. One bite and you will fall in love with it.
Makes: 4 servings
Total Prep Time: 40 minutes
Ingredients:
- 1, 8 ounce jar of salsa verde, evenly divided
- 2 Tbsp. of extra virgin olive oil
- of a lime, juice only
- 2 cloves of garlic, minced
- tsp. of powdered chili
- tsp. of ground cumin
- 1 pound of chicken breasts, boneless and skinless
- 4 slices of Monterey jack cheese
- 1 jalapeno pepper, thinly sliced
- of a red onion, chopped
- 1 Tbsp. of cilantro, chopped
- Lime wedges, for serving
Directions:
1. In a large bowl, add in cup of the salsa verde, extra virgin olive oil, fresh lime juice, minced garlic, powdered chili and ground cumin. Stir well to mix.
2. Add in the chicken and toss to coat.
3. Cover and set aside to marinate for 20 minutes.
4. Preheat an outdoor grill to medium or high heat. Add in the marinated chicken. Cook for 6 to 8 minutes. Turn the chicken over and continue to cook for another 6 to 8 minutes or until the chicken is cooked through.
5. Add a slice of Monterey jack cheese onto each chicken breasts. Top off with the sliced jalapeno pepper and chopped onion. Continue to cook for 5 minutes or until the chicken is melted.
6. Remove and serve the chicken with the remaining salsa verde.
Shrimp Tostada Bites
If you need to make a delicious appetizer dish for your next lunch event, then this is the perfect dish for you to make. It is so delicious, I guarantee that it will be gone in just a matter of minutes.
Makes: 8 servings
Total Prep Time: 50 minutes
Ingredients for the shrimp:
- 1/3 cup of extra virgin olive oil
- cup of lime juice
- 2 Tbsp. of honey
- 2 cloves of garlic, minced
- 1 tsp. of smoked paprika
- 1 tsp. of cayenne pepper
- Dash of salt
- 1 pound of shrimp, peeled and deveined
Ingredients for the guacamole
- 2 avocados
- 2 Tbsp. of lime juice
- of a red onion, minced
- of a jalapeno, chopped
- 2 Tbsp. of cilantro, chopped and extra for garnish
- 1 bag of corn chips, for serving
Directions:
1. In a large bowl, add in all of the ingredients for the shrimp. Toss well to evenly mix. Cover the bowl and set into the fridge to marinate for 30 minutes.
2. In a large skillet set over medium heat, add in a tablespoon of olive oil. Once hot, add in the shrimp. Cook for 3 to 5 minutes or until the shrimp is bright pink. Remove the skillet from heat.
3. In a medium bowl, add in the avocados. Mash with a fork until smooth in consistency. Then add in the lime juice, minced red onion, chopped jalapeno pepper and chopped cilantro. Stir well to mix. Season with a dash of salt.
4. Place a dollop of the guacamole onto the corn chips. Top off with a piece of shrimp. Garnish with extra chopped cilantro and serve immediately.
Corn Chilaquiles Casserole
This is a delicious Mexican dish you can serve whenever you want to impress your friends and family with something incredibly tasty.
Makes: 4 servings
Total Prep Time: 35 minutes
Ingredients:
- cup of cilantro, chopped
- 1 jar of verde sauce, with tomatillos
- 3 cups of tortilla chips, baked
- 2 packs of chicken breasts, bone-in and cut into halves
- 1 pack of corn kernels, frozen
- 1 cup of Monterey jack cheese, shredded
- Cilantro, chopped and for garnish
Directions:
1. Preheat the oven to 375 degrees.
2. In a large baking dish, add in half of the baked tortilla chips. Top off with half of the verde sauce, chicken halves, frozen corn and shredded Monterey jack cheese. Repeat these layer 2 to 3 more times.
3. Cover with a sheet of aluminum foil. Place into the oven to bake for 20 minutes. Remove the foil and continue to bake for 5 minutes.
4. Remove and serve immediately with a garnish of chopped cilantro.
Mexican Huevos Rancheros Sandwich
This is the perfect Mexican dish to make to kick start your day in a filling way. Serve this sandwich with fresh hash browns for the tastiest results.

Ingredients for the Mexican syrup:
- cup of Piloncillo sugar
- cup of water
- cup of cloves, whole
- 1 orange peel
- 4 sticks of cinnamon
