Dear readers, welcome to the world of flavors series! You are handling the book Mexican Cookbook 365 Volume 1 .
What an exciting time to be working in the kitchen. Todays markets are brimming with so many great ingredients from around the world. We have globalization to thank for the opportunity to please our taste buds with a variety of flavorsand for making healthy food choices more accessible to us.
Fully capturing the overwhelming variety of dishes worldwide is next to impossible. But you can get a fair amount from this series.
This series about Worlds Cuisines allows so much freedom in the kitchen. You can pick from a broad array of the most delicious dishes in the world.
Many of the recipes here include authentic cooking techniques and ingredients and to recreate a dish similar to the local fare of the country where it comes from. Luckily, the ingredients needed for these recipes can be bought almost anywhere. If theres any ingredient not on stock in grocery stores, I suggest an easy-to-find alternative here. This series focuses on bringing some of the worlds well-known dishes to your kitchen and eventually, to your dining table.
I tested each recipe here in my kitchen. Thus, I can assure you that all recipes meet my requirements: they must be healthy and both easy and quick to make. No ingredient here is hard to find. The most important things in this series are moderation, balance, and variety.
Cooking a dish from another country develops your sense of taste and may even lead to better health. It also deepens your understanding of your own culture. With this series and the ingredients from your local market, it's so much easier to enjoy the variety of great international flavors.
Chapter 1: Mexican Beef

- 15Minute Dinner Nachos Supreme
"Taco-seasoned ground beef simmered with tomato and rice is topped with salsa, cheese and lettuce for a tortilla chip-dipping meal."

Ingredients
- 1 (1.12 ounce) package Pace Taco Seasoning Mix
- 1 (10.75 ounce) can Campbell's Condensed Tomato Soup
- 1 1/2 cups water
- 1 1/2 cups uncooked instant white rice
- Pace Thick Chunky Salsa
- Shredded Cheddar cheese
- Shredded lettuce
- Tortilla chips
Direction
- Cook beef and taco seasoning in skillet until browned. Pour off fat.
- Add soup, water and rice. Heat to a boil. Cover and cook over low heat 5 min. or until done.
- Top with salsa, cheese and lettuce. Serve with tortilla chips for dipping.

"Say 'ole!' with this bold and spicy taco dip that includes all of the flavors I remember from my many vacations in Mexico. One thing I will tell you is that this goes perfectly with an icy cold Mexican cerveza (beer) or Margarita! Enjoy with your favorite taco chips. We especially love the blue corn, and the flavor is perfect with this tasty dip."

Ingredients
- 1 pound ground beef
- 2 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 2 (8 ounce) packages cream cheese, softened
- 1 red bell pepper, diced
- 2 teaspoons lime juice, or as needed
- 1 cup chopped fresh tomato
- 1 (6 ounce) can sliced black olives, drained
- 2 cups shredded Cheddar cheese
- 2 cups chopped iceberg lettuce, divided
- 1/2 cup chopped green onion
- 1 (16 ounce) jar taco sauce
- 2 avocados - peeled, pitted, and diced
- 2 lime, zested and juiced
- 1/2 cup sour cream
- 1/2 cup chopped fresh cilantro
Direction
- Cook the ground beef in a large skillet over medium heat until browned and crumbly, about 10 minutes. Drain the excess grease.
- Stir in the garlic, chipotle peppers, cumin, and chili powder; cook just until the flavors combine, about 5 minutes. Set aside to cool.
- In a bowl, mix the cream cheese, red bell pepper, and 2 teaspoons lime juice to make a spreadable mixture. Layer the cream cheese mixture in the bottom of a large springform pan or 9x13-inch baking dish.
