MEXICAN RED RICE SALAD

INGREDIENTS
250 g red rice
1 can of canned corn
1 can of red beans
2 carrots
1 red pepper
1 yellow pepper
1 red onion
4 tbsp. tablespoon olive oil
1 lime
1 clove of garlic
tsp. 1 teaspoon ground paprika
tsp. 1 teaspoon ground cumin
Salt pepper
PREPARATION
Cook the rice according to the package directions, then drain and let cool.
Wash the peppers, remove the seeds and white membranes, cut them into strips. Peel the carrots and grate them with a large grater. Drain the corn and beans. Peel and slice the onion.
Peel and crush the garlic. Mix it in a bowl with the spices, oil, lime juice, salt and pepper.
In a salad bowl, mix the cooked rice with the vegetables and the sauce. Turn to coat well.
Correct the seasoning if necessary, and serve.
MEXICAN SPICY MARINADE

INGREDIENTS
9 garlic cloves
3 tbsp. chili sauce
3 tbsp. powdered paprika
3 tbsp. 1 teaspoon ground cumin
1.5 c. 1/2 teaspoon dried oregano
6 tbsp. chopped cilantro
3 untreated oranges
3 untreated limes
6 tbsp. Tequila gold
6 tbsp. tablespoon olive oil
PREPARATION
Squeeze oranges and limes to collect their juice.
Combine the juice of the oranges and lemons in a bowl with the olive oil, chili sauce, tequila, paprika and cumin powder, dried oregano and chopped cilantro.
Peel and chop the garlic. Add it to the bowl with a little fleur de sel. Stir well.
Cover the bowl with cling film and place the Mexican marinade in the fridge until needed.
Use this Mexican marinade to brush pieces of lamb, pork, beef or chicken before cooking.
MEXICAN RICE

INGREDIENTS
1 sweet chorizo
1 punnet of smoked bacon
1 large can of peeled tomatoes
1 onion
3 glasses of rice
3 glasses of water
PREPARATION
Degrease and brown the chorizo cut into rings, add the chopped onion and the bacon.
Leave to brown a little.
When it is golden, add the rice and cover with the water, the pepper and the peeled tomatoes that you will crush a little with 1 spoon.
Cook, covered, over low heat, stirring occasionally
When all the water has been absorbed
It's ready! Serve hot.
MEXICAN COCKTAIL SHRIMP

INGREDIENTS
3 teaspoons of olive oil
1 teaspoon chili seasoning
24 shrimp, size 31-40, peeled, deveined and tails removed
1 chopped tomato
1/2 fresh jalapenos, seeded and chopped
3 tablespoons chopped red onion
4 teaspoons chopped fresh cilantro
1 teaspoon of lime juice
24 small crispy tortilla cups
3 tablespoons of sour cream
salt
PREPARATION
In a skillet, heat 2 Tbsp of the oil over medium-high heat.
Add the chili seasoning and shrimp, then cook for 3 minutes or until pink (stir halfway through cooking). Season with salt and set aside. (The shrimp will keep overnight in the refrigerator or up to 1 month in the freezer.)
In a bowl, combine the tomato, jalapeo, onion, 3 tbsp. of the cilantro, lime juice and remaining oil. Salt. (The pico de gallo will keep overnight in the refrigerator.)
When ready to serve, in each cup, divide the drained pico de gallo, sour cream and reserved chili shrimp. Garnish with the remaining cilantro.
BEEF CHIMICHANGA RECIPE

500 g Ground beef
6 Flour tortillas
4 Slices of cheddar cheese
Iceberg lettuce
1 Chopped white onion
Spicy sauce
salt
pepper
PREPARATION
To prepare the beef chimichanga recipe, take 6 flour tortillas, wrap them in aluminum foil and put them in a static oven for about 15 minutes at 175 . When the tortillas are hot, do not turn off the oven, it will be useful later.
After heating the flour tortillas take a large skillet and cook 500 g of ground beef over medium heat and let it go until cooked.
