Mexicans are very passionate about their food. The great Mexican blend of rich, earthy flavors and informal, festive dining is to die for. But you cant even imagine that how lavish and varied the dishes of Mexico really are.

This easy-to-cook recipe book offers a whole range of dishes, from sea food, poultry, beef, pork, rice, beans, tortillas and vegetables to appetizers made of jalapeos, tortillas, tostadas and their relatives guacamole, and salsas, ending with alcoholic, non-alcoholic and hot beverages.

There are recipes of irresistible finger licking foods such as deep fried quesadillas, paella with assorted sea food and burritos with beans and rice; bean pancakes and baked molletes with melted cheese will give a great kick-start to a special day; you will also find nopales (cactus pad) soup, chili de relleno, and cheese nachos to serve with beer or beer based drink michelda.

There is a special section which is only devoted to traditional Mexican drinks like agua fresca, cafe de olla (coffee with the cinnamon and jaggery) and many tequila-based cocktails.

Tortilla sandwich with mozzarella cheese!

Serves:

Preparation Time: 5 minutes

Cooking Time: 10 minutes

Ingredients:

  • 2 medium all purpose flour tortillas
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste

Method:

1. Place a tortilla over chopping board. Put cheese over the tortilla and spread it all over in an even layer.

2. Sprinkle some salt and pepper. Top it up with other tortilla.

3. Heat pan over medium-low flame and place the tortilla sandwich in it. Cook both sides until golden-brown and cheese melts down completely.

4. Once done, remove the quesadilla from pan and place it in serving platter.

5. Cut it into 4 slices by making a vertical and horizontal slit.

6. Serve hot with red salsa.

Chilaquiles

Preparation Time: 5 minutes

Cooking Time: 20 minutes

Ingredients:

  • 2 cups roasted chicken, shredded
  • 2 all purpose flour tortillas
  • 1 small tomatoes
  • 2 small green chilies
  • 1 small white onion, finely chopped
  • 1/2 cup ricotta cheese, shredded
  • 1 cup avocado, chopped
  • Handful of fresh coriander leaves
  • 1 teaspoon garlic paste
  • Olive oil for deep frying
  • 1 tablespoon olive for tomato sauce
  • Salt and pepper to taste

Method:

1. Cut the tortillas into triangles like nachos. Keep aside.

2. Heat olive oil for deep frying in deep bottom pan with medium-high flame. Put the tortilla slices into it and fry until golden-brown.

3. Once done, remove the tortilla triangles from pan with the help of a strainer and place them over a paper towel so that it can absorb the extra oil. Keep aside.

4. Boil 1/2 quart in a deep bottom pan. Put tomatoes and chilies in it. Cover the pan with a lid and cook until tomatoes are cooked through.

5. Once done, remove the tomatoes and chilies from pan. Put them in a food processor and blend until smooth. Keep aside.

6. Heat 1 tablespoon olive oil in a sauce pan over medium-high flame. Pour in blended tomato mix and garlic paste in it. Cook for 5 minutes over low flame.

7. Once done, remove the pan from heat and keep aside.

8. Now, place the tortillas in a serving platter. Add shredded chicken and pour over prepared sauce.

9. Top with onion, avocado, coriander leaves and ricotta cheese.

10. Serve hot!
