Egg Drop Soup
This soup is made up with chicken stock and ten whisked eggs are drizzled to make it slurry.
Ingredients:
- 4 cup chicken broth
- cup scallions, white and green separated, chopped
- 1-inch ginger slice, chopped
- Salt, to taste
- 1 teaspoon white peppercorn
- 4 tablespoon corn flour
- 4 eggs
- 1 tablespoon sesame seeds oil
Directions:
1. In a saucepan add chicken broth, whites of shallots, salt, white peppercorn, sesame seeds oil, and ginger, stir and let to boil on medium-high flame.
2. Now reduce the flame and let to simmer for 10-15 minutes.
3. Now take bowl and combine 4-5 tablespoons of waste with corn flour and stir to make a paste. Add in all eggs and whisk well.
4. Place the tines of your fork near to the edges of bowl and gradually drizzle eggs mixture into soup. Stir continuously for 1-2 minutes.
5. Let soup to simmer for 10-15 seconds then turn off the flame.
6. Ladle to serving bowls and top with green portion of scallions.
Hot and Sour Chinese Soup
If you like hotter flavor you can add chili sauce and some lime juice in your soup bowl.
Ingredients:
- 4 oz. pork shoulder, sliced in strips
- 2 dried red chilies, minced
- 1 egg
- 1 teaspoon oil
- 4 tablespoons corn starch
- cup water
- 2 tablespoons white vinegar
- Salt, to taste
- 9 cups of chicken broth
- teaspoon white pepper
- cup tofu, cut into small slices
- 2 tablespoons soya sauce
- cup dried shiitake mushrooms
- 1 teaspoon sugar
- 1 teaspoon mushroom sauce
- cup scallion greens, chopped
- cup wood ears
Directions:
1. In a bowl combine corn flour with water and stir well. Set aside.
2. Soak mushrooms and wood ears in 1 cup of water for 1 hour, set aside.
3. In a soup pot add chicken broth, salt, pepper, ginger, and pork, let to cook on medium flame until boiled.
4. Now add in soaked mushrooms, sugar, red chilies, oil, wood ears, soya sauce, vinegar, and mushroom sauce, stir well and let to simmer for 9-10 minutes on low flame.
5. Now add tofu and stir well.
6. Drizzle corn starch and stir soup continuously. Cook for 1-2 minutes.
7. In a bowl crack egg and whisk it well.
8. Pour egg into soup pot and stir with spoon. Simmer for 1 minute.
9. When done pour soup into serving bowls and top with scallions.
10. Enjoy.
Chicken Bone Soup
Chicken bone soup is made up with chicken bones and feet, you can add heads of chicken also.
Ingredients:
- 2 medium onion, sliced
- 3 carrots, peeled, sliced
- 2 ribs of celery, sliced
- 5-6 springs of thyme
- Bones of 1 chicken
- 1 lb. chicken feet
- 3 tablespoons vinegar
- 2 bay leaves
- Salt, to taste
- 1 teaspoon white pepper
- 1 teaspoon Chinese herb
Directions:
1. In a saucepan add 5-6 cups of water and let to boil well.
2. Now transfer chicken feet into hot water and let to sit for 2-3 minutes.
3. Turn off the flame and clean the chicken feet by peeling quickly.
4. Transfer into a large container and wash. Set aside.
5. In a saucepan add chicken bones, onion, carrots, thyme, thyme, bay leaves, celery, salt, pepper, herbs, vinegar, and chicken feet, add plenty of water so everything is covered with water.
6. Now cook for 30 minutes or until boiled.
7. After that reduce the flame and cook covered for 5-6 hours.
8. When done serve hot.

Beef Noodle Soup
Beef noodle soup is one of most popular Chinese soup.
Ingredients:
- lb. beef, cut into small pieces
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons vegetable oil
- 4-5 garlic cloves, chopped
- 1-inch ginger piece, minced
- 1-star anise
- cup sherry
- 5 cups beef broth
- 2 tablespoons soya sauce
- teaspoon Chinese 5 spice powder
- 1 tablespoon oyster sauce
- 6-8 boy choy leaves
- cup onion, chopped
- 1 pack Chinese noodles, cooked
Directions:
1. Heat oil in a saucepan and add in ginger, garlic, beef, and onion, cook until fried from all sides.
2. Season with salt, pepper, and sherry, stir well.
3. Now add beef broth, 5 spice powder, and star anise, let to boil on medium heat.
4. Reduce flame and cook soup for 2-3 hours so that beef is tendered.
5. Now discard the star anise from the soup.
6. Add in oyster sauce and soya sauce, mix well.
7. Add Bok choy in soup and cook for 2-3 minutes.
8. Now divide noodles in serving bowls and add in soup.
9. Serve hot.
Chinese Veg Noodle Soup
This soup with be enough to warm you soul.
Ingredients:
- 1 medium onion, chopped
- 3-4 garlic cloves, minced
- 1 tablespoon vinegar
- 2 green chilies, chopped
- 2 tablespoons soya sauce
- teaspoon black pepper
