Foods ranging from Argentina, Brazil, Chile, Columbia, and even parts of Peru can all be made by people with no prior Latin American cooking skills. It just takes a bit of practice.
That is exactly what you are going to learn in this book. Delicious Latin Food Recipes
Cuban Beef Stew
Most traditional Latin dishes tend to be made with a generous amount of olive oil to marble the meat that you cook. This particular version has a lower fat content, making it delicious and healthy to enjoy.
Makes: 8 Servings
Total Prep Time: 2 Hours and 10 Minutes
Ingredients:
- 2 Tbsp. of Extra Virgin Olive Oil
- 1 Onion, finely chopped
- 4 Cloves of Garlic, minced
- 1 Red Bell Pepper, finely chopped
- 1 Pounds of Sirloin Beef Tips, cut into small sized cubes
- 2 Bay Leaves, fresh
- tsp. of Cumin, ground
- 1 tsp. of Oregano, dried
- Cup of Sherry, dried
- 1, 8 Ounce Can of Tomato Sauce
- 2 Tbsp. of Red Wine Vinegar
- Cup of Pimento Stuffed Green Olives
- Cup of Raisins
- 2 Tbsp. of Capers
- 4 Russet Potatoes, peeled and cut into quarters
- Dash of Salt and Black Pepper
Directions:
1. Place a large sized saucepan over medium heat. Add in the olive oil and once the oil is hot, add in the chopped onion and minced garlic. Cook for the next 3 to 5 minutes or until transparent.
2. Then add in the small beef cubes. Continue to cook for 5 to 10 minutes or until browned thoroughly. Add in the diced red bell pepper, fresh bay leaf, ground cumin and dried oregano. Stir to mix and continue to cook for the next 2 to 3 minutes.
3. Add in the dried sherry, tomato sauce, red wine vinegar, pimento stuffed green olives and capers. Stir to mix well.
4. Pour in enough water to cover the meat. Bring this mixture to a boil. Once boiling reduce the heat to low and cover. Allow to simmer for 1 hours or until the beef cubes are tender.
5. After this time add in the quarters potatoes. Season with some salt and black pepper. Cover and continue to cook for 20 to 30 minutes or until the potatoes are tender. Remove and serve whenever you are ready.
Mexican Rice
This excellent authentic Mexican recipe is one that you can serve to accompany any other kind of Mexican dish that you plan on making. Make sure to cook the rice properly and use high quality chicken broth for the tastiest results.
Makes: 6 Servings
Total Prep Time: 30 Minutes
Ingredients:
- 1 Cup of Long Grain White rice
- 1 Tbsp. of Vegetable Oil
- Cups of Chicken Broth
- of an Onion, chopped
- of a Green Bell Pepper, chopped
- 1 Jalapeo Pepper, fresh and chopped
- 1 Tomato, seeded and chopped
- 1 Cube of Chicken Bouillon
- Dash of Salt and Black Pepper
- tsp. of Ground Cumin
- Cup of Cilantro, fresh and chopped roughly
- 1 Clove of Garlic, cut into halves
Directions:
1. Use a medium sized saucepan and set over medium heat. Add in some vegetable oil and white rice. Stir to coat and cook for 3 minutes.
2. Pour in the chicken broth into the mixture and bring to a boil.
3. Once boiling add in the chicken bouillon cube, dash of salt and black pepper, ground cumin, roughly chopped cilantro and halved garlic. Stir to mix.
4. Bring the mixture back to a boil. Once boiling reduce the heat to low and cover. Cook for 20 minutes.
5. After this time remove the mixture from heat and serve.
Grenadian Spice Cake
This is a classic Caribbean cake that you can make to celebrate practically any occasion. Once baked, dust the top of the cake with some confectioners sugar and serve with your favorite kind of fruit.
Makes: 12 Servings
Total Prep Time: 2 Hours
Ingredients:
- 2 Cups of All-Purpose Flour
- 1/8 tsp. of Salt
- 1 Cups of White Sugar
- tsp. of Baking Powder
- 1 Cup of Unsalted Butter, chilled and cut into tablespoon size pieces
- 1 tsp. of Lime Zest, freshly grated
- 1 tsp. of Ground Nutmeg
- tsp. of Ground Cinnamon
- tsp. of Ground Allspice
- 3 Eggs
- Cup of Whole Milk
Directions:
1. First preheat your oven to 350 degrees. While the oven is heating up, grease a 9 by 5 inch loaf pan with some cooking spray.
2. Then use a large sized bowl and add in the all-purpose flour, baking powder and dash of salt. Stir to combine and set this mixture aside.
3. Use a medium sized bowl and add in your chilled butter and white sugar. Use an electric mixer and cream the mixture on the highest setting until creamy in consistency. Add in the eggs and beat to mix.
4. Add in the freshly grated lime zest, ground nutmeg, ground cinnamon and ground allspice. Add in the whole milk. Stir to mix thoroughly.
5. Pour this batter into the greased loaf pan.
6. Place into the preheated oven to bake for 1 hour 15 minutes to 1 hour 30 minutes or until completely baked through. Remove after this time and cool for 10 minutes before serving.
Sopapillas
This is a Latin flat bread that is not only easy to prepare, but is typically served with something sweet over the top. Serve this with some honey butter for the tastiest results.
