4. To prepare the patties; divide the meat into 8 balls. Pressdown until you have a round disk, roughly high x 4. Setfour of them aside.

If using charcoal: oil a rack, lay patties and cook overmedhot coals for 10 minutes. Carefully turn and grill for 10 minutes (160F). 9. If you are using gas; Put the grill on full blast to heat thespace and then set to medium-hot. Oil a rack, lay patties andcover.
10. Place the burger on a bun. Top with tomatoes, onion,lettuce and any other sauces you desire.1 clove garlic (finely minced)

4 portobello mushrooms
4 chunky slices of country-style sourdough bread
(cut in half and lightly toasted)
cup red peppers (sliced and roasted)
cup tomato (chopped)
cup crumbled feta cheese
2 tbsp. chopped olives
1 tbsp. vinegar (red wine)
tsp. oregano
2 cups mixed baby salad greens
2. On the open grill, lay the pepper. Every few minutes giveit a quarter of a turn. Grill for 15-20 minutes or until charredand a little floppy.
3. Using the side of a knife, mash garlic and salt until it'stotally smooth. Add 1 tbsp. of oil to the mixture and mix thispaste in a dish. Brush the oil mixture lightly over portobellos,then brush one side of each slice of bread.
4. Mix together in a bowl, the roasted red peppers, olives, thetomato, vinegar, feta, oregano and the remaining oil. Toss in the baby greens.
7. Layer the mushrooms on four of the slices of bread (topside down); spoon the red pepper salad over the top andperch the remaining bread at the side.

4 hamburger buns (cut in halves and toasted)
salsa (fresh or bottled)

tsp. black pepper
2 tbsp. ketchup
1 tbsp. Worcestershire sauce
1 tbsp. steak sauce (your preference)
1 tsp. sugar
Oil (a tiny splash)
1 tsp. vinegar
1 clove garlic (minced)
hot pepper sauce (5 dashes)
toppings:lettuce/cucumber slices/Radish
1 cup red and yellow tomatoes (flesh only, chopped)
3 tbsp. red onion (finely sliced)
2 tbsp. cilantro (freshly chopped)
1 serrano chili (fresh, finely chopped)
1 tbsp. lime juice (freshly squeezed)
1 tsp. pure honey
3. For sauce, combine into a small pot, Worcestershire sauce,ketchup, steak sauce, hot sauce, vinegar, sugar, tiny splash of oil and garlic. Bring to a boil then lower heat. Simmeruncovered for roughly 5 minutes. Put aside for later use.
4. Add salt and pepper to ground meat and mix together.Next, shape into 4 patties: thick.5. Place patties directly above heat, on an oiled grill rack.Grill for 16-18 minutes or until internal temperature is
160F. Turn only once and baste often with sauce.
1 lb. ground sirloin
1 lb. ground chuck

6 hamburger buns
pimento cheese (see below)
1 Shallot, (finely sliced, chopped and diced)
1 block sharp cheddar cheese, (8 oz. grated)
cup mayonnaise (regular)
2 oz. pimentos (take from a jar)
coarse ground black pepper to taste
2. To prepare pimento cheese: Mix together the shallot andthe cheese. Mix in the mayonnaise until the mixture becomesfirm (holding together). Stir in the pimentos, adding a littleof the liquid from the jar for added flavor. Season and placein the refrigerator until needed.
3. Mix together the grounded meats with salt and pepper.Divide into six patties (Indent the middle of the patties so that it will be easier to cook all the way through).
4. Place on a rack, brush with olive oil and set directly overthe heat. Grill until golden brown, turning only once at thehalfway point (1012 min). Immediately as they leave thegrill, top them with a spoon of pimento cheese and pop theminto the buns.
