Introduction
Hey! We were just heading out to the supermarket, so join us! Today well be buying a ton of chicken thighs for our weeks meals. Like, a lot of chicken thighs - seriously. Aside from being super flavorful, easy to cook, and cheap, theyre easy to freeze! That means were pretty much sold on them and were hoping to get you as excited about them as we are.
First up, make sure to get the thickest ones you can find. Sure, they are harder to grill sometimes but if thats the case, you can just cut them in half. Whereas if youre baking them, the thicker they are, the juicier theyll turn out. And because were not sure yet how you like to cook your chicken thighs, were just thinking ahead of all the possibilities.
Next up, well need some pasta, rice, and all of your favorite veggies to go with them. Think potatoes, mushrooms, carrots, pumpkin, tomatoes, pretty much anything (but make sure to buy what the recipes call for at least). Some olive oil will be good too because we dont have much left back at home and thats about it, so lets head on home.
Now that were back in the kitchen, the first thing we want you to do is cut up some chicken thighs depending on what youre going to be making this week. Portion it out in a Ziploc bag or freezer-friendly containers. Then, leave enough chicken out for about 2 recipes. Go ahead and freeze the rest. You probably will need to defrost it sooner than you think because our recipes are extremely delicious, but out of all the proteins, chicken is probably the one you have to handle with the most care to avoid food poisoning, so freeze more than you have to if you want. Well use the rest to get cooking.
Today were starting with the Thai-Style Chicken Thighs and the Salsa Verde Chicken Penne. Since youve already chopped up the chicken, all we need to do now is chop our veggies, prepare our sides, and get cooking because this kitchen is about to get very hot and yummy! So lets start by preheating the grill and...following the recipe step by step. Not a lot of rocket science to it, is there? That means youre pretty much set to start cooking any time you want now, so what will you make first? You may have to run back to the supermarket quickly but well wait for you because were excited to start cooking! Just remember our tips and keep a close eye on the stove or oven at all times because, while we love chicken thighs, we like them juicy, not dry! Good luck!

Recipe 1 - Peking-Style Chicken Thighs
This is a relatively easy chicken recipe in that theres no major undertaking involved, except the addition of Chinese wine. The distinct flavor from the wine gives this dish its personality, so make sure to get the best you can.

Cooking Time: 1 hour and 30 minutes
Ingredient List:
10-12 chicken thighs, boneless and cut into one-inch pieces
5 tbsp. light soy sauce
4 tbsp. Chinese white wine (or Shaoxing wine) or dry sherry
2 tbsp. ginger, freshly grated
2 tbsp. brown sugar
White pepper
cup cornstarch
4 tbsp. vegetable oil
bunch of spring onion, freshly chopped

How to Cook:
In a large bowl, combine soy sauce, Chinese white wine, grated ginger, brown sugar, cornstarch and white pepper. Mix all the ingredient well.
Add the sliced chicken thighs to the bowl. Cover the mixing bowl with plastic wrap and marinate in the fridge for at least an hour. For optimum results, it is better to marinate the chicken overnight.
Over low heat, heat up vegetable oil in a large non-stick pan. Get the chicken from the fridge and drain from the marinade.
Cook the marinated chicken slices for 8-10 minutes or until they appear crispy on the sides.
Serve in a platter with freshly steamed white rice and top with chopped spring onion.
Recipe 2 - Braised Chicken with Creamy Beans and Greens
This chicken dish will surely make your momma proud since its packed with tasty protein and nutritious veggies. The creamy sauce is just a bonus for a pleasant gastronomic experience.

10 chicken thighs, bone-in and skin-on
4 tbsp. all-purpose flour
3 tbsp. extra virgin olive oil
2 medium white onions, chopped finely
3 tbsp. garlic, minced finely
1 cup white wine
2 cups chicken stock (preferably home-made)
1 cups all-purpose cream
1 can white beans (cannellini variety, around 15-ounce can)
4 bunches Swiss chard leaves, chopped
1 tbsp. lemon zest
bunch of fresh thyme sprigs
salt and pepper to taste
