Chapter 1: Easy Chicken Thigh Recipes
Chicken Thighs I
(Mandarin Chicken)

Ingredients

  • 1 C. orange juice
  • 1 tbsp soy sauce
  • 1 (1 oz.) envelope dry onion soup mix
  • 1/2 tsp garlic powder, or to taste
  • 8 chicken thighs

Directions

  • Set your oven to 350 degrees before doing anything else.
  • Get a bowl, combine: garlic powder, orange juice, onion soup, and soy sauce.
  • Clean your chicken under fresh cold water then enter them into a casserole dish.
  • Top the chicken pieces with the onion soup mix.
  • Now cook everything in the oven for 90 mins.
  • Baste the chicken every 20 mins.
  • Enjoy.

Chicken Thighs II
(Honey and Sriracha)

Ingredients

  • 1/2 C. rice vinegar
  • 5 tbsps honey
  • 1/3 C. soy sauce (such as Silver Swan(R))
  • 1/4 C. Asian (toasted) sesame oil
  • 3 tbsps Sriracha
  • 3 tbsps minced garlic
  • salt to taste
  • 8 skinless, boneless chicken thighs
  • 1 tbsp chopped green onion (optional)

Directions

  • Get a bowl, combine: salt, vinegar, garlic, honey, sriracha, soy sauce, and sesame oil.
  • Divide the sauce amongst two bowls.
  • Put your chicken pieces into one of the bowls, then evenly coat them with sauce, and place them in the fridge, with a covering of plastic, for 60 mins.
  • Set your oven to 425 degrees before doing anything else.
  • Now a get a pan and boil the remaining half of the marinade for 4 mins while stirring.
  • Now put your chicken in a casserole dish and top with one third of the sauce in the pan.
  • Cook everything in the oven for 35 mins and baste every 10 mins.
  • Let the chicken sit for 15 mins while you get your sauce heated again. Once it is hot again top the chicken with the rest of the hot sauce.
  • Enjoy.
