With chicken, you can concoct different methods of cooking, whether it is baked, soup, grilled, roasted or fried.
Aside from its versatility, chicken is a healthy alternative for people who are on a restricted diet and for our Muslim brothers and sisters; it is a halal-approved meat. It is so quick to prepare even if you come home late. You need three limes to produce cup juice. If you dont like your chicken piping hot, you can lessen the red pepper flakes into teaspoon. Servings: 6 Ingredients 1/2 cup extra-virgin oil Additional 1 tablespoon extra-virgin olive oil 2 teaspoons cumin 1/4 cup lime juice 1/2 teaspoon red pepper flakes , crushed 1 pound boneless skinless chicken breasts Pinch of Kosher salt 3 thinly sliced bell peppers Dash of ground black pepper 1 thinly sliced large onions Tortillas for serving DIRECTIONS: Whisk in a large bowl the lime juice, red pepper flakes, cumin and cup of extra-virgin oil. Rub the chicken with pepper and salt and place in the bowl, toss to coat with the marinade. Place in the fridge for half an hour to two hours to absorb the marinade.
Heat 1 tablespoon of extra-virgin oil in a skillet and cook the chicken, eight minutes for each side, until golden and the center is no longer pink. Let the chicken rest for ten minutes before slicing into strips. Cook the onion and the bell peppers in the same skillet for five minutes until soft. Add the chicken, stir and toss to combine well. Servings: 4 Ingredients 1 pound boneless skinless chicken breasts (cut into half) 1/2 cup all-purpose flour 1 tablespoon lemon pepper seasoning 1 teaspoon kosher salt lemon zest lemon , cut into thin rounds lemons , divided 2 tablespoon extra-virgin olive oil 2 tablespoons butter 1/2 cup low-sodium chicken broth 2 minced cloves garlic For garnish: Freshly chopped parsley Directions Preheat the oven at 400 degrees F. Whisk in a medium bowl the lemon pepper; flour, lemon zest and salt. Place the chicken breast in the mixture, toss until fully coated.
Heat the oil on medium-high heat in a large ovenproof skillet. Cook the chicken breast in a single layer for five minutes until the bottom is golden. Flip and cook the other side for another five minutes. In the same skillet, add the broth, butter, garlic, and lemon slices, and bake for fifteen minutes until the chicken is cooked thoroughly and the sauce is slightly reduced. Pour some of the sauce over the chicken. Garnish with parsley.
