Breakfast Skillet Sausage, Egg, and Cheese Grits Breakfast This breakfast and brunch dish is just perfect to start your day with high energy.
It ignites your appetite with its blend of fresh herbs, eggs, sausage and cheese grits. Servings: 6-8 Ingredients 1 package (8-10 ounces) frozen chopped spinach 16 ounces hot Italian sausage 2 cups chicken or vegetable broth 1 cup half and half 1 cup grated Gouda cheese 1/2 teaspoon salt 1 cup old-fashioned grits 1/4 teaspoon ground black pepper 1 cup grated sharp Cheddar cheese , divided 1/4 teaspoon garlic powder 2-3 tablespoon chopped green onion , divided 3 large lightly beaten eggs 1 1/2 tablespoons plain cornmeal For toppings: Red pepper flakes Freshly chopped green onion and parsley Sriracha Chopped bacon Directions Thaw spinach, drain on paper towels, chop and set aside. Preheat oven at 350 degrees Fahrenheit. Pour broth in a medium-size pot and bring to a boil. Add grits, half and half, and salt. Reduce heat and simmer mixture until grits soften for 12 to 15 minutes, stirring frequently.
Remove from heat, set aside. In a cast iron skillet, brown the sausage on medium-high heat for 5 to 8 minutes, stirring occasionally until the sausage is crumbly and cooked. Remove sausage and drain on paper towel, set aside. Combine cooked grits with garlic powder, Gouda, green onion, pepper and cup cheddar until mixture becomes consistent. Add cooked sausage to grit mixture and slowly fold in the eggs to blend well. Grease with olive oil a 10 to 12 inch cast iron skillet, and sprinkle the sides and bottom with cornmeal.
Add the grits and sausage mixture. Sprinkle cheddar cheese and red pepper flakes over your breakfast mixture. Bake for 55 minutes. Remove breakfast bake from oven and let it cool on a wire rack for half an hour. Garnish with chopped parsley/green onion or Sriracha/bacon, and top with hot sauce of your choice. Servings: 5 Ingredients 2 cups gluten-free rolled oats 1 cups puffed millet 1 cup raw unsalted pecan pieces 1 cups unsweetened freeze-dried cranberries 1 tablespoon roasted flax seed 1 teaspoon ground cinnamon teaspoon ground allspice teaspoon ground nutmeg teaspoon ground cloves teaspoon vanilla extract 3 tablespoons stevia syrup 1 tablespoon cranberry juice 2 whole cinnamon sticks Directions Combine rolled oats, millet, pecan, cranberries, flax seed, ground cinnamon, allspice, nutmeg, cloves, vanilla extract, cranberry juice and stevia syrup in a large mixing bowl. Mix all ingredients to coat and well blended. Heat a cast iron skillet on high heat for three minutes. Pour the granola into the hot skillet, stir and continue cooking on medium heat for 20 to 25 minutes. Add cinnamon sticks to the mixture.
