Ingredients
For the Dough:
4 cups (about 20 ounces) all-purpose flour
1/3 cup sugar, plus 1 tablespoon
4 teaspoons baking powder
1/2 teaspoon salt
8 tablespoons unsalted butter, cut into 1 tablespoon pieces
2 eggs
1 1/2 cups (about 12 ounces) whole milk
For the Filling:
6 ripe medium peaches (about 2 pounds), sliced
2 tablespoons cornstarch
1/2 cup light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3 tablespoons unsalted butter, cut into bits, plus more for greasing pan
Directions

Set oven rack to middle position and preheat oven to 400F. Add flour, 1/3 cup sugar, baking powder, and salt to the bowl of a food processor. Pulse several times to mix. Add butter pieces and pulse until mixture resembles coarse meal, 6 to 8 one-second pulses. Transfer mixture to a large bowl.

In a small bowl whisk together eggs and milk. Add liquid to flour mixture. Stir with a spoon until well incorporated and a sticky dough begins to form. Turn dough out on a very well floured surface, sprinkle the top with flour, and knead lightly until you have a soft, workable dough. Wrap dough in plastic wrap and refrigerate for 15 minutes.

Butter a 9- by 13-inch glass or metal baking dish and set aside. Cut off 2/3 of the dough and return remaining dough to refrigerator. Sprinkle top of dough lightly with flour then cover with a large sheet of plastic wrap and roll out into a rectangle that overlaps the edges of the baking dish by about 2 inches. Lay rolled out dough into the dish, press into the bottom and along the sides.

Add sliced peaches to a large bowl. Dissolve cornstarch in 2 tablespoons of water in a small bowl. Pour mixture over peaches and toss to coat. Transfer peaches to dough-lined pan. In a small bowl mix together light brown sugar, cinnamon and nutmeg then sprinkle mixture over peaches. Dot with butter pieces.

Divide remaining dough in half, turn it out on a very well floured surface, sprinkle top lightly with flour then cover with a large sheet of plastic wrap and roll out to a large sheet approximately 13 inches long and approximately 1/4 inch thick. Cut the dough into 4 long strips and arrange evenly across the length of the dish (do not press into the sides yet). Repeat rolling out process with remaining dough, this time rolling out a wider sheet thats approximately 9 inches long. Cut the dough into 5 strips. Weave the lattice crust together (for a visual guide, check out this Sweet Technique slideshow). Sprinkle crust with remaining 1 tablespoon of sugar.

Bake until crust is golden brown and peaches are bubbly, 45 to 50 minutes. Let cool for 10 to 20 minutes then serve.

Servings: 2 Ingredients 2 cups frozen hash brown potatoes 3 large eggs 1/2 pound country sausage 1/2 small peeled and chopped onion 1/2 small seeded and chopped bell pepper 1 cup shredded cheese 3/4 cup whole milk 1/2 teaspoon Worcestershire sauce 1/4 teaspoon salt Cooking spray Directions Thaw and pat dry, frozen hash brown potatoes and shred, set aside. Heat the oven at 375 degrees Fahrenheit. Spray or grease a 6-inch diameter casserole dish. Form country sausage into a large patty, as it tends to shrink when cooked. In a skillet on medium-low heat, brown the patty, five minutes on each side.

Remove patty from skillet and drain on a plate lined with paper towel. Stir in onion and pepper in the oil left when cooking the sausage and saut for 3 minutes and scrape brown bits frequently. Season potatoes in a small bowl with pepper and salt and press firmly to bottom of casserole dish. Arrange the sausage patty over potatoes, and arrange on top of sausage the onions and peppers. Drizzle grated cheese on top. Whisk milk, eggs, Worcestershire sauce, and salt and pour into the baking dish.

Bake casserole in the middle of the oven for about 35 minutes until toothpick comes out clean. Let the casserole cool for 15 minutes before serving. Serve! Nutritional Information: 1117 calories; 51 g protein; 62 g carbohydrates; 7 g dietary fiber; 74 g fat ;1536 mg Sodium; 584 mg cholesterol Potato Casserole With Comte This casserole is an excellent dish to prepare for weekends and lazy days. Just relax on the couch while having a good time with your loved ones. You can make a twist by adding or combining greens and spices. Servings: 2-3 Ingredients 1 pound fingerling potatoes 3 tablespoons butter 1 dash freshly ground black pepper 2 teaspoons chopped fresh thyme leaves 2 ounces finely grated on microplane Comt cheese Pinch of salt Directions In a large pot, pour cold water with a little amount of salt, and add potatoes.

Bring water to a boil on high heat. Lower heat and simmer water until potatoes are cooked for about 10 to 15 minutes. Remove potatoes and set aside. On medium high heat, set a large cast iron skillet. Add the butter until melted, and then turn off the heat. Add cooked potatoes individually to the skillet.

Using the back of a spatula smash each potato, adding the next batch until skillet is loaded with an even layer of potatoes. When the skillet is filled with potatoes, turn heat to medium, and reduce heat when potatoes begin to sizzle. Never touch the potatoes, allow them to cook slowly for about 20 minutes until the bottom of the potatoes are evenly browned. Check potatoes by using a spatula and add butter when the skillet seems dry as potatoes will absorb the moist during the cooking process. Season the potatoes and flip them and continue cooking for 10-15 minutes until both sides are now crispy and brown. Sprinkle potatoes with thyme and 1 ounce Comte cheese, add more if you want them cheesier.

Turn off heat, cover and cook for additional 3 minutes. Remove cover and serve hot. Enjoy!
