Try spiralized zucchini pasta and add it to your creamy-garlicky shrimp dish. Youve got to enjoy every bite of this awesome pasta alternative. Servings: 3-4 Ingredients 1 pound peeled and deveined medium or large shrimp 3 tablespoons butter , divided Freshly ground black pepper Kosher salt 3/4 cup heavy cream 3 minced cloves garlic 1 cup halved cherry tomatoes 1/2 cup grated Parmesan 3 tablespoons large zucchini (spiralized) 3 tablespoons freshly chopped parsley Directions Melt 1 tablespoon of butter in a large skillet on moderate heat. Stir-fry the shrimp and sprinkle with a pinch of salt and pepper. Cook for two minutes each side until the shrimp is pinkish in color.
Place cooked shrimp on a platter and the juices remain in the skillet. Melt the remaining 2 tablespoons of butter and saut the garlic for 1 minute until fragrant. Whisk in the heavy cream, simmer and stir in tomato halves, parsley and Parmesan. Simmer mixture until the vegetables are soft and the sauce is slightly consistent for three minutes. Servings: 9 Ingredients 8 cooked lasagna noodles Cooking spray 2 tablespoons vegetable oil 1 1/4 cups onion , chopped 3/4 cup green bell pepper , chopped 1 package (8 ounces) sliced mushrooms 1 minced garlic clove 1 package (10 ounces) thinly sliced deli turkey breast 1 bottle (26 ounces) tomato-basil pasta sauce 1/4 cup (1 ounce) fresh Parmesan cheese , grated 1 teaspoon dried Italian seasoning 1/2 teaspoon salt 1/4 teaspoon black pepper 2 lightly beaten large eggs 1 carton (16 ounces) fat-free cottage cheese 1 cup (4 ounces) part-skim mozzarella cheese, shredded Directions Preheat oven at 350 Fahrenheit. In a large pan on medium-high, heat the oil. Saut the onion, garlic, mushrooms, and bell pepper for five minutes, until aromatic and tender. Add the turkey and cook for ten minutes, and stirring occasionally.
Add the Italian seasoning and tomato-basil pasta sauce. Reduce the stove heat to medium. Simmer mixture for ten minutes, stirring frequently. In a mixing bowl, combine the cottage cheese, Parmesan cheese, salt, eggs and black pepper. Line the bottom of a cooking spray coated 13x9 inch baking dish with one cup turkey mixture. Place four noodles on top of turkey mixture; followed by half of the Parmesan mixture, and two cups of turkey mixture.
