Welcome to the Vietnamese Cookbook. This book provides you with a comprehensive compilation of authentic Vietnamese recipes to relish.
Vietnamese cuisine is known for using fresh herbs and vegetables, lean meats, and fish instead of bread or rice. Since the cooking methods are simpler than Chinese methods, Vietnamese food is also relatively easy to cook. Furthermore, all ingredients are readily available in grocery stores in the West. Therefore, to create authentic Vietnamese dishes, you need not visit Asian markets or delis. Instead, you are advised to buy fresh soy sauce, fish sauce, and Thai basil leaves at your local grocery store.
Because your time is limited for cooking, youll try to make the dishes as quick as possible. Youll need to use a little oil or lard at the beginning of the cooking process, but after that, you can simply leave the pan alone. As soon as hot oil is added to the food, all that you need to do is stir or flip it over for golden browning or caramelization.
At this point, you should wash your hands and prepare a large platter for serving the dish.
The dishes described in the following pages are all simple to make. The ingredients, besides fresh vegetables and fish, are usually found in common pantry items. You will soon get used to using the Vietnamese technique of using a little oil or lard at the beginning of cooking to create a crust on foods such as fish and meats. In your home country, there may be additional ingredients that you can substitute for these Vietnamese ones. In this case, you may be able to substitute them to make the dish tastier or more familiar.
The recipes described in this book have been handed down from generation to generation. Before printing this book, I tested all the recipes a number of times to ensure that they would work for Western cooks. If you follow the instructions carefully, you will be able to produce authentic Vietnamese dishes. Enjoy your cooking!

However, when it comes to Vietnamese cuisine, there are many dishes that are interesting to try. If you are native to or have native friends, then Vietnamese food is something that you should explore.
Vietnamese Grilled Lemongrass Chicken
The Vietnamese kitchen isnt worth the salt without a better secret such as lemongrass. With a specific preparation for this chicken, the addition of lemongrass is worth the sweetest and unique tastes in this recipe. The aroma is just worth enjoying.

Preparation time: 40 minutes
Ingredients:
2 tsp. soy sauce
1 lbs. boneless and skinless chicken thighs, pounded
2 tbsp. lemongrass, finely chopped
2 tbsp. canola oil
1 tbsp. green onions, chopped
1 tbsp. lemon juice
2 tsp. garlic, minced
2 tsp. light brown sugar
1 tsp. fish sauce
Directions:
Stir all the ingredients together in a sizeable bowl or place in a resealable plastic bag (except for the green onions) and set aside in the fridge to marinate for at least half an hour.
After the proper marination of the chicken, preheat your grill on medium, then lightly grease the grill grates.
Remove chicken from the marinade before discarding the marinade.
Add the chicken onto the grill and grill for about 10 minutes, flipping once to cook evenly.
Serve garnished with freshly chopped green onions.

Add the olive oil and chopped shallots into a large pan.
Add in the minced garlic when the shallots turn soft and translucent.
Add the viscera meat into the pan and cook it.
Add in all the rest of the ingredients and cook until the viscera meat is cooked through.
Add in more salt and pepper if desired.
Cook the stew for about 15 minutes.
The dish is ready to be served.
