Ingredients
4 chicken thighs
2 large potatoes cut in half
2 Roma tomatoes half
1 medium eggplant cut in three
1 tsp Italian seasoning
1 tsp garlic powder
1 tbsp olive oil
1 tbsp orange concentrate
1 tsp brown sugar
1 tbsp ketchup
Method
Place all the ingredients in a bowl
Add the spices and toss well
Place on a grill until it is cook
Remove each veggie as they cook
Serve
2. Chicken Puff Tarts
It is just like a pizza but in a puff pastry shell.

Cook time 20 minutes
Ingredients
1 puff pastry shell
200g boneless chicken, skin off
1 Red pepper
1 yellow bell pepper
1 green bell pepper
1 small red chili
1 sweet white onion
1 jar Mexican tomato sauce
1 tsp Mexican oregano
1 tbsp oil
Salt and pepper
Cheddar cheese (optional)
Method
Cut all the veggies and chicken in strips
Heat the oil in a pan and cook the chicken for a minute
Add all the vegetables onion, peppers, chili with the spices
Pour the tomato sauce and cook until thick
Season for taste and allow it to cool down
Place the thawed pastry sheet on a lined baking tray and pour the sauce all over
Bake until pastry is golden brown

3. Chicken and Potato Stew
We are starting with a bowl of soup that you cannot go wrong with, it is simple, delicious, and you can keep for another day.

Ingredients
cup celery
1 cup runner beans chopped
2 cups diced carrots
250g russet baby potatoes cooked
2 tbsp butter
1 tsp garlic and onion powder
cup frozen peas
450g cook chicken chopped
cup onion
cup flour
150ml stock
200ml milk
Method
Melt the butter in a saucepan and add the flour to cook for 2 minutes or until it is opaque
Add the stock, spices and cook some more
Add the milk and the remaining ingredients
Cook until it starts to thicken about 5 to 7 minutes
Serve with a sprinkle of parsley
4. Herby Butter Poached Chicken
If you want something different in your chicken, try these. They are yummy and juicy.

Ingredients
800g boneless chicken breast, skin off
6 tbsp unsalted butter or ghee
1 tbsp lemon juice
1 tsp cumin
5 pieces cloves
300ml of buttermilk
1 red chili cut in two and partially deseeded
1 tbsp Herbes de Provence
2 tsp black pepper
Salt to taste
Method
Melt the butter in a deep, wide pan
Add the cumin and cloves to release their fragrance
Add the chicken, do not overlap, and brown the chicken
Pour the buttermilk, lemon juice, chili, spice, black pepper, and salt
Allow it to cook low and slow for 15 minutes or until it is no longer pink
Serve with roasted veggies.
5. Chicken Hash with Sunny Side Up
