When you bake mini pies, one advantage is that several kinds can be made at the same time. That way, you can make a platter with a variety of little pies to serve your family and friends. The tiny filling amounts do puff up when they bake, so dont put too much filling inside. Melting butter in your muffin tin will help a bit to keep it from happening.
The ingredients for mini pies are as easy to find as those for regular sized pies. Youll just use less. A tube of biscuits makes them easy to prepare and bake 8-12 mini pies, depending on the size of the tube.
If you like, you can pre-cook the fruit in pies like apple or cherry, so the filling will be cooked as well as the crust. Be sure the fruit is cut smaller, too. Mini pies are simple to prepare, and they make wonderful meals. Read on and learn more!
Mini Breakfast Pie Recipes
1 Mini Egg Breakfast Pies
These mini egg pies are simple and quick to make. You can serve them for breakfast or use them for an appetizer at brunch.
Makes 3 servings
Cooking + Prep Time: 55 minutes
Ingredients:
1 sheet of puff pastry dough
3 eggs, large
3 tsp. of oil, vegetable
Salt, kosher, as desired
Pepper, ground, as desired
Instructions:
1. Preheat the oven to 430F.
2. Use a mug or cup with the same diameter +/- as bottoms on muffin tin you will use. Cut out three dough circles from puff pastry. Be sure circles are cut close together so youll be saving dough.
3. With the rest of the dough, cut strips to wrap inside muffin cups. They should be an inch wider than muffin cup depth.
4. Rub some vegetable oil in bottoms of three or four cups in middle of muffin tin. Place dough circles in bottoms of cups. Wrap strips of dough along cup walls. They should be an inch or so taller than depth of muffin cups.
5. Use your fingers to pinch, then press beginnings and ends of strips of dough together. Press edges of dough strips down, close to edges of circles, so it Makes one dough cup that sticks together well.
6. Crack a large egg in each cup of dough. Season as desired.
7. Pinch small sections of dough wall tops together carefully. Crimp around edges so dough is bent close to middle. Make 5 crimped dough crusts on top of pies. The middle should be left open as a circle, exposing eggs.
8. Place muffin tin on middle oven rack. Bake at 430F for 15 to 20 minutes, till pastry has turned golden brown in color and eggs have set. Remove from tin and serve.
2 Mini Cheddar, Bacon & Apple Breakfast Pies
These little pies contain hearty ingredients like bacon, cheddar and apples. It Makes them breakfast food packed with flavor.
Makes 6 Servings
Cooking + Prep Time: 40 minutes
Ingredients:
1 cup of apple, chopped & peeled
3/4 pound of cooked crisp, crumbled bacon
1 cup of cheddar cheese shreds
1/2 cup of chopped onions, white
3 tbsp. of chopped sage leaves, fresh
1/2 tsp. of salt, kosher
1/2 cup of baking mix
1/2 cup of whole milk
2 eggs, large
Instructions:
1. Heat the oven to 350F. Spray 12 muffin tin cups lightly, using non-stick spray.
2. Stir apples, bacon, onions, cheese, kosher salt & sage together in a large-sized bowl.
3. Stir milk, eggs and baking mix together in medium mixing bowl with a fork, till blended well.
4. Spoon almost 1 tbsp. of baking mixture in bottom of muffin cups. Top them with 1/4 cup each of the bacon mixture. Top with the rest of the baking mixture.
5. Bake in 350F oven for 20-30 minutes, till you can insert a toothpick in middle and have it come back clean. Edges should be golden brown. Then, cool for about 5 minutes in the pan. Transfer mini pies to a cooling rack and allow to cool a bit. Serve.
3 Mini Sausage Breakfast Pies
These sausage mini pies have just the flavor you want for breakfast. You can also make them ahead, so your family can grab them from the freezer when they want breakfast on the go.
Makes 10 Servings
Cooking + Prep Time: 45 minutes
Ingredients:
3/4 lb. of sausage, breakfast
1/8 cup of onions, minced
1/8 cup of bell pepper, minced, green
1 x 12-oz. can of biscuit dough, refrigerated
3 beaten eggs, large
3 tbsp. of milk, 2%
1/2 cup of cheese, Monterey Jack, shredded
