This recipe substitutes bacon, eggs and cheese for seaweed, raw fish and rice. Its a modern twist on the old sushi rolls youve seen so many times before. It transforms the dish into one that is perfectly suitable for breakfast.
1. Weave bacon so you have five strips lengthways and five strips width-ways
2. Add the egg to tater tots in a bowl. Mash well.
3. Slice bell pepper.
4. Spread the mixture with tots across the weaved bacon. Leave about one bacon strip at the top uncovered.
5. Sprinkle the cheese over the top. Place thinly sliced peppers across the cheese.
6. Roll up the bacon.
7. Secure roll with toothpicks. Bake for 30-35 minutes at 350F.
8. Allow to cool. Cut into rolls. Serve.
Rolled Omelet Sushi
In keeping with the theme of sushi, this breakfast dish includes rice. But the rest of its ingredients are more in tune with breakfast. If you dont have parchment paper for rolling, you can use foil.
Makes: 2-4 Servings
Cooking + Prep Time: 1 hour & 45 minutes
Ingredients:
- 4 asparagus spears, thin
- Red bell pepper, julienned sliced
- 1/2 cup of rice, cooked
- 6 eggs, large
- 1/2 cup of Parmesan cheese, grated finely
- 6 tbsp. of milk, whole
- 1/8 tsp. of salt, kosher
- 1 tbsp. of flour, all-purpose
- 2 tbsp. of cream cheese
To garnish: sesame seeds
Instructions:
1. Line sides and bottom of pre-greased 13x9 casserole dish with baking paper. The paper edges should hang over the sides of the pan. Spray paper or foil with oil. Set the pan aside.
2. Place cream cheese in small sized bowl. Whisk in salt and flour and combine. Whisk in the milk slowly until the mixture is smooth.
3. Beat in eggs till blended. Pour into pan prepped in step 1.
4. Bake for 1/2 hour at 375F until the eggs are set and puffed. The mixture flattens out while it is cooling.
5. While egg cooks, microwave or blanch veggies till they are softened a bit, but still somewhat firm.
6. Remove the egg mixture from oven. Remove from pan with baking paper. Sprinkle with cheese.
7. Spoon the rice on top of the egg.
8. Place asparagus spears and strips of bell pepper on top.
9. Roll up filled omelet from the long side. You can use the baking paper to help.
10. Let the omelet sit for several minutes, to firm up and cool.
11. Slice into 2 pieces. Sprinkle with sesame seeds. Serve.
Ham & Sushi Breakfast
Once, sushi was thought of as raw fish and a ball of rice. But this dish repurposes the recipe to make a wonderful breakfast. It still includes traditional sushi ingredients, so its a bit more of a hybrid recipe.
Makes: 4 Servings
Cooking + Prep Time: 45 minutes
Ingredients:
- 3 cups of sushi rice, steamed
- 4 sheets of fresh seaweed, roasted
- 6 tbsp. of sushi seasoning, mitsukan
- 4 eggs, large
- 4 ham slices
Instructions:
1. Fry a slice of ham. While frying, pour sushi seasoning on warm rice. Mix well.
2. When the ham is done, cut in half. Set it aside. Batter two eggs at a time. Fry them.
3. Lay rice on seaweed. Flatten into thin layer.
4. Put two halves of the ham atop rice like bread on a sandwich.
5. Cut fried egg and place on top of ham. Egg can be folded in half for better fit. Roll.
6. Repeat these steps for last three rolls. Serve.
Waffle Sushi Rolls
Why have a boring bowl of oatmeal for breakfast when you can whip up these rolls made with waffles instead of nori seaweed sheets? Add cream cheese and fruits, and you have a breakfast that is sure to be a hit with your family.
Makes: 4 Servings
Cooking + Prep Time: 35 minutes
Ingredients:
- 8 oz. of cream cheese, whipped
- 1/4 cup of sugar, granulated
- 2 eggs, large
- 1 cup of baking mix
- Maple syrup
- Pineapple, bananas, strawberries, or other favorite fruits
Instructions:
1. Slice fruits into thin, long match sticks so they fit in roll well.
2. Preheat waffle iron as you mix baking mix, sugar and egg.
3. Put dough in heaping tablespoons onto waffle maker. Cook for 1/2 minute. Dont cook it for too long, or you wont be able to roll it.
4. Lay waffle on a cutting board. Spread cream cheese on it. Top with favorite fruits.
5. Wrap waffle into tube, with fillings inside. Use a bit of cream cheese to seal the seam.
