About the Author
I f youre like me, you love to try new recipes and discover new tastes. I find food to be one of lifes greatest pleasures so many tastes, so little time but I love the journey! The combination of sweet and salty, chocolate and bacon, or caramel and bacon together on the tongue to me is pure nirvana. So creating new recipes to satisfy both sweet and salty cravings makes me very happy indeed.
When Im not trying new recipes and new foods, my life consists of kayaking the secluded waterways of South Florida, rendering graphics and illustration, and re-purposing old furniture into new treasures.
Kayaking, like cooking and baking, is a great stress release for me. Being on the water, hearing nothing but the sounds of nature and reveling in every small detail of my surroundings, gives me great peace. My perfect day kayaking is complete when I stop at a quiet embankment to enjoy a special indulgent lunch Ive prepared the night before and it will consist of something sweet and salty.

I ts said that our bodies crave salt and that bacon can actually alter the brain much like heroin or cocaine. And, while that may be true, our undying devotion for all things bacon is nothing but pure lust. And its not just the taste its also the aroma that first draws us in with its come hither ambrosia-like scent evoking sexy thoughts of smoky, salty fats resting on our watering tongues like the sweet nectar of the gods.
The only thing better than the salty goddess herself is its blending with blessed sweet sugar for the ultimate in taste satisfaction - the merger of sweet with salty.
This book is a mixture of both quick and easy recipes for getting your bacon fix as well as a few more involved and time consuming recipes. Some may wish to create their brownies from scratch and others may want to use a prepared mix. Theres no hard and fast rule. And, while some of these recipes may be more time consuming, the ultimate end is pure heaven. If you try no other recipe this book has to offer - at least try the salty carmel with bacon ice cream.
All these recipes have been tested and tweaked. I found that I personally loved the kick of cayenne pepper so I added it to my bacon brittle and used the same bacon brittle in the salted carmel and bacon brittle ice cream. But then, I add cayenne pepper to pretty much everything from chocolate, eggs, smoothies to my morning coffee
And, while you may need more than a good bacon dessert recipe to actually catch a man - it cant hurt. The author offers no guarantees only enticing bacon desserts the rest is up to you.

Basic Cooking Instructions for Bacon
Cooking Instructions for Crispy Bacon
Preheat oven to 400F.
Lay our your strips of bacon on a baking sheet lined with aluminum foil with the shiny side of the foil down.
Bake for 12-15 min. Remove from oven and cool the strips on paper towels.
Depending on the recipe you are using, at this point you can crumble or chop it into the sizes you need.
You can prepare and refrigerate the bacon a day or two in advance or store crumbled bacon in the freezer for a few weeks.
Cooking Instructions for Candied Bacon
To candy the bacon, preheat the oven to 400F.
Lay the strips of bacon on a baking sheet lined with aluminum foil, shiny side of the foil down.
Sprinkle 1-2 teaspoons of brown sugar evenly over each strip of bacon.
Bake for 12-15 min. until golden brown. Flip the bacon over halfway through to baste in the brown sugar syrup.
Remove from oven and cool the strips on a parchment lined wire rack. Do not place on paper towels as they will stick.
Brown Sugar & Spice Bacon Strips
Serves 6
INGREDIENTS
- 1 lb thick-cut bacon
- 1/2 C light brown sugar
- 1/4 tsp ground cayenne pepper
DIRECTIONS
Preheat oven to 400F.
In a small bowl, mix together brown sugar and cayenne pepper.
Line a cookie sheet with aluminum foil shiny side down.
Arrange your strips of bacon on the cookie sheet.
Evenly sprinkle each strip of bacon with 1 tsps of brown sugar and cayenne mix.
Bake for 6 min. before turning slices over and continue baking until bacon is crispy and brown, 6-8 min. more, then transfer to parchment paper. Do not place bacon on paper towels as they will stick.
Spicy Chocolate and Pistachio Covered Bacon
Yields 10-12 pieces
INGREDIENTS
- 1 lb. Thickly sliced bacon
- 8 oz. Semi-sweet chocolate
- 4 oz. Shelled pistachios for toasting
DIRECTIONS
Preheat oven to 350F.
Chop pistachios and spread evenly on parchment lined cookie sheet. Bake for 5-6 min. to bring out the nutty flavor. Watch closely as the pistachios will burn quickly.
Increase oven temperature to 400F.
Place bacon on a cookie sheet and cook about 10-12 min. until nice and crispy. Remove cooked bacon from oven and lay on paper towels to drain and cool.
In the meantime, melt your chocolate in double boiler over low heat. Using a pastry brush, coat one side of the bacon with the melted chocolate, place on parchment lined cookie sheet and sprinkle with chopped pistachios. Do not place the chocolate coated bacon on paper towels as they will stick.
Refrigerate to set the chocolate and serve cold.
Dark Chocolate Cupcakes with Peanut Butter Bacon Frosting
Serves 16
INGREDIENTS
Chocolate Cupcakes
- 1 - 21 oz.box of Duncan Hines Decadent Triple Chocolate Cake Mix
- 3 large eggs
- 1/3 C vegetable oil
- 1/3 C water for chocolate filling
- 1 C water for cupcake batter
- cupcake liners
Peanut Butter Bacon Frosting
- 1 pkg cream cheese (room temperature)
- 1/2 C creamy or crunchy peanut butter
- 1 tsp vanilla
- 3 C powdered sugar
- 2 Tbsp milk
- 3/4 C crispy bacon bits
DIRECTIONS FOR CUPCAKES
Preheat oven to 350.
Prepare cupcake batter according to box directions. Pour batter into cupcake liners. Bake in the preheated oven until the tops spring back when lightly pressed, 20-25 min.
Cool in the pan set over a wire rack. When cool, frost with your peanut butter frosting and sprinkle reserved bacon crumbles on top.
DIRECTIONS FOR FROSTING
In a large bowl, beat butter and peanut butter together until fluffy. Slowly add in vanilla, sugar and milk and mix until you get a good spreading consistency. Use a little more milk if needed. Fold in 1/2 C bacon bits (leave C for topping). Frost cupcakes and sprinkle remaining bacon bits on top
