Avocado Bacon Egg Rolls
A yummy appetizer made from sliced avocados, crispy bacon and egg roll wrappers is a must try recipe for your family or friends.
Yield: Makes 12-14 servings
Ingredients:
Cooking oil
2 large, ripe avocados, peeled and sliced
Fresh juice 1/2 lime
Pinch of salt
6-7 slices cheese , pepper jack
12-14 cooked bacon slices
12-14 wrappers, egg roll
1 t bsp flour
1/4-1/2 cup water
Method of Preparation:
- In a large bowl, mix sliced avocado, lime and salt and then set aside.
- On a separate bowl, create a watery paste by combining flour and water.
- On a clean and flat surface, place a piece of egg roll wrapper and arrange like a diamond.
- Lay horizontally a piece of cheese, 1 slice of avocado, a strip of bacon and top with another slice of avocado on the center of the wrapper.
- Then roll and fold both ends and seal the wrapper using the flour paste.
- Repeat and make 12-14 rolls.
- Deep fry the rolls in a heated frying pan.
- Once rolls are golden brown, place the rolls on paper towels to drain the excess oil.
- Then slice the rolls in half and serve immediately.
Bacon-wrapped Scallops with Spicy Mayo Sauce

1/4 cup hot chili paste
1 lime, freshly juiced
2 tbsp cilantro, chopped
2 heads lettuce, washed
large avocados, sliced
Method of Preparation:
- To make the sauce, combine mayonnaise, chili paste, lime juice and cilantro in a bowl and refrigerate before use.
- With each scallop, wrap with a piece of bacon and place a toothpick to pack tightly.
- Place each wrapped scallop in a baking sheet and drizzle with olive oil and seasoned with salt and pepper.
- Place in the broiler and cook for 15 minutes or until bacon is crisp.
- In a large platter, make lettuce cups and top with wrapped-scallops, slices of avocados, a dollop of spicy mayonnaise and sprinkle with cilantro and then serve.

peeled hardboiled eggs, chilled
8 slices cooked bacon, crumbled

Method of Preparation:
- Slice each hardboiled eggs in half lengthwise and remove the yolk.
- Place the egg yolks in a bowl and mash with cheese, mayonnaise and mustard.
- Reserve few pieces of bacon and mix the rest into the yolk mixture.
- Equally divide the mixture and top to each egg white.
- Sprinkle with crumbled bacon and chopped parsley and then serve.

Ingredients:
1 t bsp butter, salted or unsalted
1 tbsp flour, all-purpose
1 cup whipping cream
8 ounces chopped bacon
4 cups leeks, thinly sliced
1 cup celery , finely chopped
1 bay leaf
1/8 tsp cayenne pepper
2 tbsp dry white wine
2 tbsp Pecorino Romano cheese, grated
20 medium oysters, fresh and removed from shells
1 cup breadcrumbs, fresh
Method of Preparation:
- In a heated skillet, melt the butter and then add flour.
- The n slowly add the cream until the mixture thickens and then turn off the heat.
- Cook chopped bacon in a pan until crisp and then place on a paper towel to drain excess oil. Reserve 2 tbsp of bacon drippings.
- In a pan with reserve d drippings, saut leeks, chopped celery, bay leaf and cayenne until vegetables are soft.
- Then add the wine and cook for a few seconds.
- Then add the cream mixture and wait until it simmer.
- Then add the cooked vegetables and then mix with bacon and cheese and season with salt and pepper.
- Place mixture in a covered bowl and refrigerate to slightly cool.
- In each oyster shells, lay a piece of oyster and top with a spoonful of mixture and breadcrumbs.
- Place in a baking sheet and bake for 8 minutes or until crumbs turned golden brown.
