Breakfast and Brunch Recipes
French Toast
Preparation Time: 10 minutes
Cooking time: 25 minutes
Servings: 8
Ingredients:
8 slices Texas toast or sourdough bread
4 eggs
1 cup milk
2 tablespoons sugar
4 teaspoons vanilla extract
2 pinches salt
Butter and syrup for serving
Directions:
Whisk the eggs, milk, sugar, vanilla, and salt together in a large bowl.
Heat a griddle or skillet over medium heat. Spray with nonstick cooking spray.
Dip each slice of bread in egg mixture, letting it soak for 2530 seconds on each side.
Transfer the slices to the griddle or skillet and cook for 23 minutes on each side, or until golden brown.
Serve with butter and syrup.

Loaded Hash Brown Casserole
Preparation Time: 10 minutes
Cooking time: 20 minutes
Servings: 4
Ingredients:
1 pound sausage
3 tablespoons chopped red bell pepper
1/2cup grated American cheese
1/2cup grated sharp cheddar cheese
1/2cup grated Monterey Jack cheese
11/2cups grated Colby cheese (divided)
2 tablespoons butter
2 tablespoons flour
2 cups milk
2 pounds frozen hash browns
Directions:
Preheat the oven to 350degree F.
Cook the sausage in a large skillet over medium-high heat while breaking it into bite-sized pieces.
Add the red pepper and cook. Drain any grease and set aside.
Melt 2 tablespoons of butter in another skillet. Stir in the flour and let it cook for a minute or so until it starts to brown.
Whisk in 1/4cup of the milk and continue to cook and stir until the mixture thickens. Then whisk in the remaining milk and cook a bit longer. It will thicken up again; when it does, add the cheeses, reserving 1 cup of the Colby cheese for the casserole's top.
In a bowl, combine the hash browns, the cheese sauce you just prepared, and the cooked sausage. Mix so that everything is combined, then pour into a baking dish and top with the reserved Colby cheese.
Cook for about 45 minutes or until the cheese is melted and the casserole is bubbly.
