Appetizers, Snacks and Lite Bites
Artichoke and Avocado Pasta Salad
This healthy salad is packed with carbohydrates and protein and is delicious, drizzled with a fresh homemade dressing.
Servings:
Total Time: 15mins
Ingredients:
- 2 cups uncooked spiral pasta
- 1 (14 ounce) can water-packed artichoke hearts (drained, coarsely chopped)
- 2 plum tomatoes (seeded, chopped)
- 1 medium-size ripe avocado (peeled, cubed)
- cup Romano cheese (grated)
Dressing:
- cup canola oil
- 2 tbsp fresh lime juice
- 1 tbsp fresh cilantro (minced)
- 1 tsp lime zest (grated)
- tsp kosher salt
- tsp freshly ground pepper
Directions:
1. Cook the pasta until al dente. Drain and rinse until cold running water.
2. In a large-size bowl, combine the drained pasta with the artichoke hearts, tomatoes, avocado, and Romano cheese.
3. In a small-size bowl, whisk the canola oil with the fresh lime juice, cilantro, lime zest, salt, and pepper. Toss to combine.
4. Transfer to the fridge while covered until you are ready to serve.
Avocado Fries
Pass on the potatoes and instead snack on these baked avocado fries. Also, they are a lot healthier and taste just as delicious.
Servings:
Total Time: 40mins
Directions:
- 1 cup panko breadcrumbs
- tsp cayenne pepper
- 1 tsp salt
- 3 slightly firm avocados (peeled, pitted and sliced into wedges, lengthwise)
- 1 cup flour
- 3 medium-size eggs (whisked)
- Nonstick cooking spray
- Pepper (to taste)
Directions:
1. In a shallow bowl, blend the breadcrumbs with the cayenne pepper and salt.
2. Roll the avocado slices in the flour, then in the whisked eggs, and finally in the breadcrumb mixture.
3. Arrange the avocado slices on a baking sheet lined with wax paper. Spray liberally with nonstick cooking spray.
4. Season with black pepper and bake at 400 degrees F for approximately 12 minutes. Flip over halfway through the cooking process and once again spritz with nonstick cooking spray.
5. Serve with a dipping sauce.
Avocado Mozzarella Puffs
Melt-in-the-mouth puff pastry morsels filled with avocado mash and Italian cheese make sensational savory snacks.
Servings:
Total Time: 35mins
Ingredients:
- 1 avocado (peeled, pitted and mashed)
- 1 tbsp freshly squeezed lime juice
- tsp freshly ground pepper
- 2 sheets store-bought puff pastry
- 1 medium-size egg (beaten)
- 6 ounces mozzarella cheese (cut into 12 (1) cubes)
- cup salsa
Directions:
1. Preheat the main oven to 400 degrees F. Using parchment paper line a baking sheet.
2. In a mixing bowl, mix the mashed avocado with fresh lime juice and pepper.
3. Roll the pastry sheets out to a 12x16 rectangle.
4. Using a 2 pastry cutter cut out 12 circles from each sheet, to yield a total of 24 rounds. You will need 12 for the top and 12 for the bottom.
5. Brush a small amount of egg wash onto the edge of 12 rounds.
6. Top 12 of the circles with a small dollop of mashed avocado, a cube of mozzarella cheese, and approximately 1 teaspoon of salsa.
7. Take the remaining 12 pastry rounds and place on the top of the rounds with the filling and stretch the top piece of pastry to entirely cover the bottom circle to resemble small sombrero hats.
