- 1 cup milk
- 5 ounces cup olive oil
- 3 tbsp sugar
- 1 tsp baking soda
- 10 ounces flour
Sugar Water:
- 7 ounces sugar
- 1 cups water
Directions:
- For the dough: Over moderate heat, mix the milk with the olive oil, sugar, and baking soda. Once the mixture begins bubbling, remove the pan from the pan and add the flour, mixing to create a soft dough.
- Lightly grease a 12 round baking pan with oil.
- Roll the dough around the baking pan to make a smooth texture. Press the dough into the bottom and edges of the pan to an even thickness of .
- Using a fork, make dot patterns into the dough.
- Bake in the oven at 355 degrees F for approximately 25 minutes.
- To make the sugar water: In a small pan, combine the sugar with the water over moderate heat. Once boiling and the water entirely dissolves, remove the pan from the heat and allow to cool.
- Remove the Tespixhe from the oven.
- Pour the sugared water over the Tespixhe to entirely cover, and approximately up the baking pan to soak into the baked dough while cooling.
- Once the dessert is cool, transfer to the fridge for a minimum of 60 minutes before slicing and serving.
Algerian Lemon and Olive Oil Cookies
These ring-shaped cookies flavored with lemon and vanilla are crisp, crumbly, and baked to golden perfection.

- 3 large eggs
- 1 cup granulated sugar
- cup olive oil
- 1 tbsp lemon zest
- 1 tsp vanilla essence
- 2 cups unbleached all-purpose flour

- tbsp orange blossom water
- Granulated sugar (for sprinkling)
Directions:
- Preheat the main oven to 350 degrees F. Using parchment paper line 2 baking sheets.
- In a stand mixer with a paddle, beat the eggs with the sugar until pale and light. Gradually and slowly beat in the oil, followed by the lemon zest and vanilla essence.
- In a second bowl, whisk the flour with the baking powder and salt. Mix into the egg-sugar until just combined.
- Scoop out 1 tablespoonful of dough and using damp hands, roll into balls and arrange on the baking sheet. The balls should be 2" apart from one another. Repeat the process until all of the balls are made.
- Make an indent in the middle of each ball to create a impression.
- In a small-size bowl, beat the egg together with the orange water and brush the mixture lightly over the cookies.
- Sprinkle sugar over the cookies and bake in the oven for 15-18 minutes, or until golden.
- Transfer the cookies to a wire baking rack and allow to cool.
- Repeat the process with the remaining dough.
