Servings: Total Time: 55mins Ingredients: 1 (2 pound) top round, boneless steak Salt Sauce: 4 garlic cloves (peeled) 1 Fresno chili pepper 2 tsp rosemary leaves 1 tsp kosher salt 2 tbsp red wine vinegar 2 tbsp olive oil Directions: 1. Using hardwood lump charcoal, prepare your campfire for cooking. The coals should glow red and there should be white ash around the edges. Re-arrange the coals as necessary. 2. Liberally season both sides of the meat with salt and set aside to rest at room temperature for 15 minutes.
Flip the beef over and rest for a further 15 minutes. 3. Place the meat on top of the coals, and cook, flipping over halfway for approximately 3-4 minutes on each side. Cook until the internal temperature of your meat registers 120 degrees F on a meat thermometer, and the steak is medium-rare.
