Ingredients
  • 1 400g packet extra firm tofu, cut into long strips
  • cup sesame seeds
  • cup pumpkin seeds, toasted
  • 1 tsp ginger, crushed
  • 2 tsp tamari
  • 2 Tbsp rice vinegar
  • 4 Tbsp olive oil
  • 1 tsp sesame oil
  • 4 cups spinach
  • 1 zucchini, cut into strips
  • 1 cucumber, sliced
Directions
  1. Mix together olive oil, sesame oi, rice vinegar, ginger and tamari.
  2. Add the tofu strip to a pan and add of the prepared dressing.
  3. Cook for 10-15 minutes until golden, stirring occasionally.
  4. Add the sesame seeds. Add with dressing and cook for 2-3 minutes.
  5. Add the cucumber and zucchini to a bowl with the remaining dressing and stir to coat.
  6. Transfer the tofu to a plate with spinach leaves, then add cucumbers and zucchini, and top with pumpkin seeds.
Laminaria Seaweed Salad

  3. Dress the salad with the yogurt dressing.

  • tsp freshly ground black pepper
  • cup packed basil leaves, sliced
  • 2 Tbsp chopped fresh parsley

Directions
  1. In a bowl, combine melon and cucumber. In another bowl, whisk together oil, vinegar, salt, and pepper; pour over melon and cucumber and toss to coat. Add basil and parsley and toss to combine. Divide salad among 4 bowls, cups, or plates, shave cheese over the top and serve.
