Chicken-Based Soups
Chicken Noodle Soup
This soup is as basic as it gets. We recommend you always keep some homemade chicken broth in the freezer. And, making it with the broth DOES make a difference.
Cooking Time: 1 hour 5 minutes
Servings: 6
Ingredients:
Directions:
Place all ingredients except the noodles and chicken in a soup pot and bring to a boil.
Lower the heat to a simmer and cook for 30 minutes.
Stir in the chicken and cook for another 30 minutes.
While the soup is simmering, prepare the egg noodles per directions.
Stir the cooked noodles into the soup.
Cook for 5 more minutes.
The carrots should be done.
Tortilla Soup
This soup is great in the winter when you want some heat with your food. If serving it to children, either omit some chili or add the sour cream more.
Cooking Time: 55 minutes
Servings: 8
Ingredients:
5 cooked and shredded chicken breasts
6 cups chicken broth
8 oz. tomato soup
1 chopped green chili or to taste
1 cups Rotel tomatoes
1 chopped onion
3 minced garlic cloves
tsp. cumin
1 tbsp. lime juice
3 tbsp. chopped fresh cilantro
6 oz. tortilla chips
cup shredded cheddar
cup sour cream
1 sliced avocado
Directions:
Combine the chicken broth, tomato soup, green chili, Rotel tomatoes, onion, and garlic in a pot.
Stir in the chicken.
Bring the liquid to a boil, then reduce the heat to a simmer.
Simmer for 40 minutes.
Add the lime juice, cilantro, and cumin.
Simmer covered for 15 minutes.
Divide the chips between the 8 bowls.
Ladle the soup into the bowls.
Top with shredded cheddar, sour cream, and an avocado slice.
Cock a Leekie Soup
Welcome to Scotland, where cock a leekie soup is a huge favorite. Be sure the leekies (leeks) are scrubbed thoroughly.
Cooking Time: 1 hour and 5 minutes.

Ingredients:
Directions:
Place all ingredients except the potatoes in a large pot.
Bring the liquid to a boil, then simmer for 45 minutes.
Add the potatoes and simmer for 20 minutes until the potatoes are done.
Thai Curry Chicken Soup
This oriental spicy soup is packed with flavor.
Cooking Time: 40 minutes
Servings: 6
Ingredients:
cup Tikka Masala sauce
1 tbsp. curry powder
1 tsp. turmeric
1 chopped red bell pepper
1 chopped green bell pepper
1 chopped onion
2 cups sweetened coconut milk
1 tbsp. oyster sauce
4 cups chicken stock
2 cups shredded cooked chicken
2 cups small, cooked noodles
cup chopped fresh cilantro
Directions:
Stir the Tikka Masala sauce. curry powder, turmeric, red bell pepper, green bell pepper, and onion in a large pot for 5 minutes.
Add the coconut milk, oyster sauce, and chicken stock and combine well.
Simmer the liquid for 30 minutes.
Stir in the cooked chicken and noodles.
Cook for 5 more minutes.
Top with the cilantro when serving.
Curried Cream of Cauliflower Soup
This soup truly warms heart and soul. Its beyond delicious. You can add some cubed chicken while you are simmering it.
