Ingredients:
  • 2 tbsp. unsalted butter
  • cup diced shallots
  • 2 minced garlic cloves
  • lb. chopped Portobello mushrooms
  • Salt and pepper to taste
  • cup brandy
  • cup fish broth
  • 1 lb. scallops
  • cup heavy whipping cream
  • 2 tsp. herbs de Provence
  • tsp. lemon juice
  • 1/3 cup shredded Gruyere cheese
  • 2 tbsp. chopped basil
Directions:
Preheat the oven to 400 degrees
Melt the butter in a large skillet.
Saut the shallots and garlic for 5 minutes.
Stir in the mushrooms and season with salt and butter.
Cook on low for 10 minutes.
Pour the brandy and fish broth into the skillet and stir.
Bring the liquid to a boil.
Add the scallops and cook for 2 minutes.
Use a tong to transfer the scallops to a platter.
Stir the cream into the skillet and bring to a boil.
Cook on medium until the liquid in reduced to half, about 10 minutes.
Turn off the stove and let the liquid cool.
Stir in the lemon juice and herbs de Provence.
Divide the mushroom sauce into four oven-proof gratin bowls.
Divide the scallops between the bowls and top with the Gruyere cheese and chopped basil.
Place the dishes on a baking sheet.
Bake for 15 minutes.

Directions:
Preheat oven to 350 degrees.
Cut the Brie horizontally in half.
Place the puff pastry in a baking dish
Put one half of the Brie on top of the puff pastry rind-side down
Brush with the apricot preserves and sprinkle with the sun-dried tomatoes.
Cover with the second Brie half
Wrap all the brie in the puff pastry. Make sure it is all covered, or the cheese will leak.
Bake for 20 minutes.

  • 2 oz. goat cheese

  • 1 tbsp. olive oil
Directions:
Preheat the oven to 400 degrees.
Line a baking sheet with silicone and top with the pastry sheets.
Place in freezer for 10 minutes.
Use a knife to make cuts into the pastry sheets.
Bake the pastry sheet for 10 minutes and let cool.
Cover the bottom of the sheets with mustard and the goat cheese.
Top with tomato slices and season with salt, pepper, and herbs de Provence.
Drizzle with the olive oil.
Bake for 15 minutes.
Let cool and slice into tart pieces.
