Introduction
Here is 30 of the easiest Mexico recipes you can make in a hurry. All of these recipes can be made in 30 minutes or less. You will able to make tacos, tostadas, salsas, drinks and more. Let the fiesta begin!
Easy Beef Taco Skillet
Have you ever had the Hamburger Helper Taco skillet meal? If so, this is almost the same however, it's much better because it's homemade. This is my twist for taco night.
Total time: 20 minutes
Makes: 6 cups
Serving: 1 cup
Ingredients:
- 1 pound lean ground beef
- 1 small can whole kernel corn
- 1 small purple onion finely chopped
- 1 pack Old El Paso taco seasoning
- 2 cups shredded cheese divide (of your choice)
- 1/2 cup of water
- 1/4 cup hot pepper sauce
- 6 corn tortillas
Directions
1. Over medium in a big frying pan cook ground beef and onions until ground beef is brown
2. Cut tortillas in half then cut into half-inch strip
3. Next, add taco seasoning, hot sauce, tortillas, one cup of cheese, and water, to the ground beef. Stir to mix well.
4. Cover with lid and steamer 8 minutes on low heat
5. Remove the lid and add the last cup of cheese then, cook 2 minutes more.
Serve on a bowl or in a plate.
Chicken Quesadillas
Chicken quesadillas is prepared with chicken, cheese, and a few other ingredients. To make a delicious quesadilla sandwich you can eat for lunch or dinner.
Total time: 30 minutes
Make: 6 quesadilla sandwiches
Serving: 1 quesadilla sandwich
Ingredients:
- 3 cups cooked and shredded chicken
- 1/2 cup green salsa (look for the recipe in book)
- 1/4 teaspoon ground cumin
- 1/4 melted butter
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 2 cups Swiss cheese shredded
- 2 cups sour cream
Directions:
1. Place chicken, cumin, salt, and oregano in a skillet and cook for 5 minutes over medium-high heat.
2. Remove chicken mixture from skillet and lower heat to low
3. Add melted butter on only one side of tortilla put the melted butter and place butter side down in a pan.
3. Then, add chicken and cheese cover with another tortilla and place butter on the tortilla.
4. Flip tortilla sandwich and Coke for 30 seconds remove from Skillet
5. Repeat the steps 3 and 4 until all tortillas have been filled and cooked
6. Once all sandwiches have been made cut into fours.
7. Add green salsa and sour cream
Stuffed Poblano Peppers
This is a little like jalapeno poppers but with meat and cut into half. Stuffed Poblano Peppers go great with Mexican rice.
Total Time: 30 minutes
Makes: 4 servings
Serving: 1 whole chili
Ingredients:
- 1 pound ground pork
- 4 large Poblano peppers
- 2 cups cheddar cheese shredded
- 1 small onion diced
- 1 large tomato diced
- 2 tablespoon olive oil
- 1/4 teaspoon salt
Directions:
1. Over medium-high heat cook salt, turkey, and onion until turkey has browned
2. Preheat an oven to 300f
3. Cut peppers into half starting at the top and cutting down the middle. Remove seeds then wash with running cold water. Pat dry with a paper towel.
4. Line a 15*10*1 inch baking dish with alumina foil and coat with olive oil
5. Place chilies in the pan and add ground turkey, tomato, onion, and cheese.
6. Put the pan in the oven and cook for 10 minutes are until cheese has melted.
NOTE
When shopping for the Poblanos look for green ones. If you see any orange or red coloring the chilies will be spicier.
Turkey burritos
When it comes to burritos the first thing that pops into your mind maybe beef or chicken. However, in this case, we're going to use lean ground turkey. That way it is a little bit better for you. You will still have the great taste of a burrito with cheese and other ingredients.
Total time: 30 minutes
Makes: 6 burritos
Serving: 1 burrito
Ingredients:
- 1 pound lean ground turkey
- 2 cups Colby-Jack shredded cheese
- 6-12 inch flour tortillas
- 1 can refried beans
- 1/2 cup of red bottled salsa
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
Directions:
1. Cook ground turkey over medium-low Heat until cooked thoroughly and brown
2. Combined in a bowl chili powder, pepper, in powder, paprika and mix well
3. Pour powder mixture into Skillet with ground turkey and cook for 5 minutes
4. Heat refried beans and another skillet for 2 minutes
5. Place beans 2 teaspoons of cheese and ground turkey mixture into the middle of the tortillas leaving space all around the tortilla free so it can be folded.
