Its hard for us to think of anyone we know who hasnt been touched by diabetes in some way, either personally or through a family member. Diabetes represents one of the great health problems of our community. We have spent years learning how to help people with diabetes develop healthier ways of eating, but before that, we were children in homes where diabetes was an unwelcome presence. We have lived much of what you may be living now, and we know its not easy to make some of the changes you want to make.

Roniece remembers when her dad suddenly began to eat more sweets and complain of tiredness and blurry vision. Everyone tried to ignore these signs, until the day her dad didnt get up to go to work. He was told to go on insulin, a special diet, and exercise. The first Sunday morning after diagnosis, as he reached for the familiar biscuits, butter, bacon, and syrup, Roniece began to cry. Her father looked at her in amazement. Im the one who should be crying, not you! he said. Everybody has taken everything I love away from me! But he left the table without eating more.

Fabiolas father was diagnosed with diabetes after a heart attack, but he was determined to avoid insulin shots. She watched as he struggled to come to terms with the inadequate instructions he was given on diet and exercise. The rest of the family had to do without favorite sweets and desserts, until the day her mother made her special sweet potato pie and served her dad a piece. He objected, asking, Are you trying to kill me? That pie is not on my meal plan! After a year, her dad was controlling his diabetes through diet and exercise alone, and Fabiola was learning how far a little determination and education could help someone go.

There are millions of people in our community with undiagnosed diabetes. Worse, there are those who know they have diabetes and arent willing or dont know how to make the small changes necessary to take care of themselves. We wrote this book to help you learn how you can eat better without giving up some of the traditional flavors you love. We want you to know you can live long, healthy lives, even with a condition like diabetes. Thats within your power. You have the strength to meet this challenge. We hope you will enjoy these recipes for many, many years.

This cookbook would not have been possible without the love and support of many people. Thank you for assisting me in this endeavor. Your time, patience, and recipes have been invaluable. I thank my soul mate, Charlie A. Gaines, III, whom I love for many reasons. If not for your guidance, support, teaching, and reasoning, I would have given up. You kept me going through those late-night sessions. Thank you for being the wonderful man you are. I want to thank my adult children (I know you wanted me to put that in), Devona and Tramaine, for the many times you just left me alone. You are wonderful children, and I am so proud of both of you.
