(1) Color Bloom Spiralized Salad
Create a cheery feel on the table with this colorful salad - it looks great in photos too.

Preparation Time: 10 mins
Ingredient List:
For salad:
1 large cucumber, spiralized
2 large carrots, spiralized
1 large red bell pepper, deseeded and julienned
medium purple cabbage, finely shredded
2 scallions, finely chopped
2 radishes, thinly sliced
For dressing:
1 tablespoon French mustard
1 tablespoon honey
1 teaspoon balsamic vinegar
1 garlic clove, pasted
6 tablespoons rapeseed oil
2 tablespoons apple cider vinegar
Salt and black pepper to taste

Preparation:
1. Add all salad ingredients to a large bowl and mix well.
2. In a small bowl, add all dressing ingredients and whisk until smooth. Drizzle dressing on the salad and toss well. Serve.
(2) Pesto Pasta and Tomato Salad
It balances itself between a salad and a side dish, which gives your guests different options to treat themselves.

Preparation:
1. Cook pasta al dente according to the packages instructions. Drain and toss with olive oil.
2. Pour salad into a large salad bowl and add tomatoes, pesto, and pine nuts. Toss well and serve.
(3) Summer Panzanella Salad
Panzanella salad is traditional, comfortable, and complements many foods that will go on your guests plates.

Ingredient List:
2 cups cubed focaccia bread
1 tablespoon olive oil + extra for drizzle
Salt and black pepper to taste
large red onion, sliced into half-moons
1 large cucumber, quartered
1 cups mixed red and yellow grape tomatoes, quartered
8 oz mozzarella balls
A handful of basil chiffonade

Preparation:
1. Preheat olive oil to 375F.
2. Spread bread cubes on a roasting sheet, drizzle with olive oil, and season with salt. Toast in oven for 10 minutes or until golden brown and crispy. Remove from oven and set aside to cool.
3. In a large bowl, add bread cubes and the remaining ingredients. Season with salt, black pepper, and toss well. Serve.
(4) Wild Rice, Fruit, and Veggie Salad
The colors scream, have me, while the taste proves its excellence.
