Quick and Easy Chicken
Like most people, we eat a lot of chicken. Chicken is an excellent source of protein and there are endless options for cooking it. The great thing about chicken is that you can cook it every day and it can taste different every time. However, because chicken is such a popular choice, people often get bored with it. Fear Not, there are new and exciting ways to eat chicken and they are not difficult to create. All you need are a few simple ingredients and some creativity, and you can create a meal that everyone will enjoy. Most of these recipes use chicken breast, but you can substitute any cut of chicken that you have on hand and adjust cooking time accordingly.
Tomato Garlic Chicken
Prep Time: 5 mins Total Time: 25 mins 4 Servings
One of my favorite go-to chicken meals is Tomato Garlic Chicken. This quick and easy recipe can be made fast and goes well with almost any side dish.
The chicken breast in this recipe is sliced thin and sauted in a skillet. You could substitute any cut of chicken by removing it from the bone. It ends up coming out tender and full of flavor with little effort on your part. So quick and so delicious, this is sure to be your new family favorite.
Ingredients:
Chicken:
4 larges (2-3 lbs.) chicken breasts, boneless & skinless
Ground black pepper, to taste
1/2 tsp salt
Avocado oil or your oil of choice.
1/2 tsp dried oregano
Sauce:
4 large (2-3 lbs.) chicken breasts, boneless & skinless
1/2 tsp salt
Ground black pepper, to taste
1/2 tsp dried oregano
Avocado oil or your favorite oil.
Instructions:
Start by cutting chicken breasts into small strips.
Coat the chicken with Salt and pepper, Oregano, and a small amount of Garlic powder.
Peel 2-3 cloves of garlic and smash or dice.
Dice 1 red onion.
Slice 2-3 tomatoes into half-moon slices.
Sear the seasoned chicken pieces on one side, then flip and cook the other side until golden brown (3-5 mins). Set aside the cooked chicken.
Saut garlic and oregano on low heat for a few minutes in the chicken drippings to release their flavors.
Add the chicken back into the skillet and throw in tomatoes.
Cook on low to medium heat for 3-5 minutes. The tomatoes will start to release juices that will make the chicken tender and flavorful.
Remove from heat and plate.
Sprinkle with fresh parsley and serve warm over rice or pasta.
California Cajun Chicken
Prep Time: 15 mins Total Time: 30 mins 4 Servings
This tangy favorite is sure to please and comes out juicy and flavorful every time. The homemade Cajun spice provides a punch and the addition of pineapple makes your meal juicy and refreshing.
Ingredients:
2 lbs. (3-4 large) chicken breasts, boneless skinless
1 tbsp oil
1 tsp ground black pepper
2 tsp garlic powder
2- 2 1/2 tsp paprika
1 tsp onion powder
1 tsp oregano
1 tsp thyme
1 tsp cayenne pepper
1 tsp salt
1/2 tsp red pepper flakes
1 can of diced pineapple or 1-2 cups fresh pineapple
Instructions:
Cut 2lbs of Chicken Breast lengthwise into cutlets and set aside in a large bowl.
In a smaller bowl mix together paprika, oregano, onion powder, garlic powder, thyme, cayenne pepper, black pepper, salt, and red pepper flakes. Stir to combine.
Sprinkle 1-2 tbsp of the powder mixture over the cut chicken and toss to coat.
Add a small amount of oil to the mixture and toss.
