What other methods can you use to make dinner recipes simple?
Will your family still rave about the taste?
Slow cookers and Instant Pots can do some of the work for you. Its hands-free time you can spend catching up with your family instead of tending a pot on the stove. Slow cookers can cook your dinner while youre away at work, too. What could be simpler?
Cooking more of each ingredient can save you time down the line, too, if they are ingredients you use often. If youre grilling 4 chicken breasts, grab an extra 4 and grill them, too. If you are busily roasting vegetables, do some extra works for another meal.
What about choosing ingredients to make your recipes simpler?
Start with peak-of-the-season, fresh veggies, so you wont have to spend as much time cutting away bad spots, etc. Try roasting various vegetables and enjoy the different flavors they offer.
Select bold ingredients for the best flavor. Re-use vegetables and other foods that you have good results with, to turn up the flavor. Some examples are truffle oil, dried mushrooms, and sherry vinegar. It only takes a couple of great tastes to complete a simple dinner. Turn the page, and lets start cooking!
1 Lime & Cilantro Chicken
An effortless marinade of cilantro, garlic, lime & a bit of pure honey will transform chicken into something wonderful. Its a bright way to add protein to your dinner and so simple to make, as well.
Makes 6 Servings
Cooking + Prep Time: 40 minutes + 1 to 2 hours marinating time
Ingredients:
1/3 cup of oil, olive
6 minced cloves of garlic
1 tbsp. of honey, pure
2 fresh limes, zest, and juice only
1/4 cup of minced cilantro
1 tsp. of salt, kosher
1/2 tsp. of pepper, ground
2 tbsp. of chili powder
3 pounds of skinless, boneless chicken thighs
Instructions:
In a large-sized bowl, mix olive oil with garlic, juice & zest of limes, honey, chili powder, cilantro, kosher salt & ground pepper.
Add chicken to marinade and coat well by stirring. Place in refrigerator to marinate for an hour or two.
Heat large, non-stick, oven-safe fry pan on med-high. Add chicken thighs in one layer. Leave space between them.
Cook for 5-6 minutes per side, till chicken has cooked fully through. The internal temperature should be 165F, with no pink color remaining in the middle. Serve.
2 Simple Citrus Kale Salad
This salad is easy to put together and refreshing to eat. The goat cheese, jalapenos and tangerines liven up the flavor.
Makes 6 Servings
Cooking + Prep Time: 25 minutes
Ingredients:
1 bunch of fresh kale tear leaves from stalks
1 seeded, thinly sliced jalapeno, whole
3 peeled, cubed tangerines
4 ounces of goat cheese
2 tbsp. of oil, olive
1/4 cup of orange juice, fresh
1 grated garlic clove
1 tsp. of sugar, granulated
Salt kosher, as desired
Pepper, ground, as desired
1 tbsp. of sour cream, low-fat
Instructions:
Grab small handfuls of kale leaves. Slice them thinly. Continue till you have a large pile of thinly-sliced kale.
Combine oil, orange juice, sugar, and garlic in a small-sized Mason jar to prepare the dressing. Add kosher salt & ground pepper, as desired. Shake and combine all ingredients. Add sour cream. Shake once more till you have a creamy dressing.
Toss kale in 1/2 of dressing for about a minute. Add tangerine pieces and sliced jalapenos. Toss till combined well. Taste and add additional dressing, as desired.
Break goat cheese in chunks. Toss them into a salad. Leave the extra dressing on the side. Serve.
3 Simple Shrimp Scampi
This easy shrimp dish is garlicky and buttery. Not only is it delicious, but it only takes about 20 minutes to prepare.
Makes 6 Servings
Cooking + Prep Time: 20 minutes
Ingredients:
4 tbsp. of butter, unsalted
2 tbsp. of oil, olive
6 minced cloves of garlic
3/4 cup of wine white - you can substitute chicken stock if you like
1/2 tsp. of salt, sea
1/2 tsp. of crushed pepper flakes, red
1/2 tsp. of pepper, ground
1 & 1/2 pounds of shelled, de-veined shrimp, extra-large or large
1/4 cup of chopped parsley, fresh
2 tbsp. of lemon juice, fresh
